My WI, Cinco de Mayo Fun & Healthy Donuts!

Sometimes Fridays are good and other times they are just plain AWESOME.  Yesterday was AWESOME!  I started off with me Weight Watcher meeting where I LOST ANOTHER POUND! Then, stopped at TJ’s for an excellent lunch and had a mini date night with The Husband. 

I was starving when I got home my meeting so I knew I NEEDED a little protein.  Right now my current obsession is Morning Stars Maple Veggie Sausages (2 points+).

Plus a Brown Sugar Banana Nut Muffin.  The sun was SO BRIGHT I had to stand over my placemat to create a shadow to take a picture.  (5 points+)

I am so glad that I had such a busy work morning because it made the day fly by.  I had been dreaming about the Cinco de Mayo Nachos that TJ of TJ’s Test Kitchen mentioned making for us all day.

We both agreed homemade chips are better than store bought because you get more.  She used Mission EXTRA THIN tortilla chips because they really do bake up like chips and are not super hard.

2 tortillas for 2 points+

No need to do the math though because she ALWAYS marks her bags ~ I love that! Open-mouthed smile

She cut 4 tortillas into 24 triangles, sprayed with nonstick spray and a little salt then baked them at 400 degrees for 6 minutes.

My FAVORITE non-spicy salsa from Trader Joe’s!

24 Crunchy Tortilla Chips (4 points+)

3 oz of seasoned Turkey Taco Meat (3 points+)

1/3 cup low-fat cheddar cheese (2 points+)

Veggies and more veggies piled on….Lettuce, tomato, green chilies, jalapenos, green onions, 6 slices black olives (1 points+), a little corn salsa and a lot of hot sauce.

Did I mention my ENTIRE plate was 10 points+?! MUY FANTASTICO ~ I cannot wait to have them again.

As we chowed down on nachos, TJ busted out her new Baby Cakes Donut Maker!  I LOVE the name almost as much as I love the colors.

With her donut maker you can “bake” up HEALTHY mini donuts in 3 minutes!

Just mix the dough, pipe, close the lid and wait patiently for 3 minutes.

Remove and toss, dunk, or sprinkle with your toppings while warm.

We made TWO types from the Friends for Weight Loss Recipes that Shannon shared.

2 Points+ Lemon Cake Donuts ~ we used 1/2 the sugar and added 1 Tbsp Lemon Juice.  They reminded me a lot of my Meyer Lemon Chia Muffins.

2 Points+ Maple Cinnamon Donuts ~ We used regular 0% Greek Yogurt with 2 tsp vanilla extract. For those wondering, you do not taste the maple syrup at all.

My favorite part of these ~ dipping them in BUTTER then cinnamon & sugar = Beyond good!

Served with Chocolate Glazed Donut Coffee which smells amazing as it brews ~ just like chocolate donuts without the sweetness.

I pretty much want to just always be in TJ’s Test Kitchen because every time I come over she has bowls and bowls of fruit like…..Maybe I just need to have her come over each week and cut up all of mine Open-mouthed smile

My plate for real!  The thing I LOVE most about these donuts is honestly 2 is enough (we each had a 1/2 of each flavor while cooking to “test” them out).

My afternoon wasn’t as exciting as it just involved more work.  I LOVE busy days because by Friday, I am ALWAYS counting the minutes until the weekend.

When The Husband got home, he told me not to cook and then asked if I wanted to go to Monsoon Burgers.

Not to justify, but, to be honest.  I really COULD HAVE made a better choice ~ veggie burger, chicken breast sandwich, burger salad like before.  But, really, when it came down to it, I got what I REALLY wanted.

I did make sure I loaded up on those ZERO POINT+ veggies Winking smile LOL….

MMMMM…..it was totally worth every single bite.

I actually cut my burger in half so I could “assess” how full I was after eating half and decide if I NEEDED (because I knew my mouth would WANT to) go back for more.

You know what….I was content after half!  I gave The Husband my other half before I could let my mouth change my mind (7 point+ high estimate for half)

I ALWAYS get rid of my fries (except for 5 of them) as soon as my plate hits the table because I know I could easily eat all of them.  Since I saved on points+ by only eating half my burger, I had a small handful (5 points+)

I was too full for the fries!

I think food is ALWAYS better when someone else cooks it for you.

What is one thing you are currently addicted to and cannot get enough of?

For me it’s pineapple, TJ’s Turkey Bacon, Morning Star Maple Sausages and CHEESE!  Non-food ~ Words with Friends, Books on Tape (but on my phone) and Cookbooks ~ I just got two more this week!

    I can’t get enough salad from Chipolte!! LOL Ok the kids and hubby saw the donut maker so we are on a mission this weekend to find one! I weighed in this am and was up .4 oh well its that “time” . So its all good! I went to the gym 3x’s this week so I am ok with the tiny bit up! Off to the LA book fair and I have to learn how to use my camera !! LOL

    Congrats on losing a pound, you are doing great. That burger looks so delicious! What a great way to start the weekend.
    I can’t think of anything I can’t get enough of right now, I just love having a ton of healthy foods for breakfast, lunch and dinner 🙂

    Wow, those doughnuts look good! I love that they’re baked not fried.

    Congrats on losing a pound, I lost one as well!

    Unfortunately I can’t get enough of the giant bag of Costco tortilla chips my boyfriend convinced me to buy a few weeks ago. >.< I've spent way too many points on them. However, I am proud to say that I didn't let him to convince me to buy another bag when we were in Costco last night because I knew this was a major trigger food!

    Right now I am obsessed with iced Starbucks lattes (thanks to you I realized I didn't have to drink the sugar free crap and instead get one pump of something good!), bananas, trying new and exotic fruits, and reading blogs!

    I made nachos yesterday too! Store bought chips are soooo salty to me now. I didn’t feel right the whole rest of the day. Guess I’ll have to make my own now.

    Honestly, I think I would make and eat donuts all day if I had that dangerous machine. Scary.

    And I’m making nachos for dinner tonight 🙂 I’m using baked scoops, but I will be on the look out for those Mission corn tortillas to try to make my own!! I must get a mini donut maker!!

    Congrats on the Weight Loss! Great idea to cut your burger in half, sometimes we just eat it all out of habit!

    You ladies sure are having fun with your lunch get together’s and its so much fun that you share them with the rest of us!

    I never actually comment on your question posed…I usually just ramble on about things and ask you questions.

    My obsession…and its been an obsession for a really long time is frozen grapes. I’m pretty sure I could eat them for every meal. I LOVE them!!!!

    OH MY GOODNESS!
    I tried out the turkey nachos tonight for Cinco de Mayo and the fiancee and I LOVED them!!! Including the baked chips. We declared them better than storebought chips!

    Thanks for all the great meal ideas, you’re really an inspiration for me!
