I couldn’t wait to share my Wordless Wednesday picture with you all this week. There is actually a pretty good story behind it. Wanna know???
I was never one of those girls who dreamed of all the things she wanted for her wedding. In fact the concept of standing up in front of all my families and friends in a WHITE dress with my biggest side (MY BUTT) showing, kinda freaked me out. Plus, there is the logical side of both of us that said ~ weddings are EXPENSIVE ~ why not spend our money going somewhere cool and getting more than one day out of it. So…..The Husband and I “secretly” planned our wedding (ok, I got a wedding planner ~ the BEST one over there who we still keep in touch with) and we told nobody….not our parents, not our friends…nobody, until, right before we left….We both had to tell our sisters and moms because we are really bad at keeping secrets after all :D
It was honestly the BEST decision I think we’ve ever made ~ it was fun that we had a “secret” and there was NO STRESS at all ~ we were both in the moment with no worries about what would go right/wrong, wore flip flops, experience everything from getting made up to having cake and just have fun!
We were married close to two years ago on Shoal Bay on the island of Anguilla. We DID miss having our families there, but, we left our parents put our wedding album together since my Dad is a super star photographer/photo editor. Well….as we were reminiscing at our pictures, we noticed FIVE fun pictures in the back of our album of The Husband. Today’s Wordless Wednesday was just one of the pictures where my Dad had a chance to “tease” The Husband a little for not having them there.
That’s ok though…there is always the 5 year renewal we can invite them for ~ If I could do it all over again, I would ~ I seriously married the best person ever 😀
Speaking of…..The Husband surprised me with a trip to Las Vegas next weekend! He actually booked it all and was going to just tell me to pack my bags, but, then he realized I needed to request the vacation and told me. YAHOOO!!! I can’t wait!

You all didn’t think that my new found love for having something different for breakfast would last did you?
I started off with a mix of White/Yellow Nectarines and a pluot (1 cup = 1 pt).
Then, I moved on to some TJ’s Whole Wheat Sour Dough with Laughing Cow and POM Blueberry Jam (3.5 pts)
I did change it up a little because I decided I needed a little dairy :D Venti Iced Decaf Nonfat Latte with Caramel Drizzle (3 pts).
Midmorning I snacked on a Chocolate Lighter Living Pro-Biotic Bar.

I LOVED seeing the yogurt coating, big chunks of nuts and CHOCOLATE CHIPS! These bars still remind me of Lara bars, but, this flavor tasted like a chocolate covered raisin. I liked it!
Lunch involved a little sushi goodness! I had 4 pieces of this Hawaiian Roll (2 pts).
Plus some not really sushi, sushi ~ 2/3 of a Tempura Shrimp Roll (6 pts).
I never thought of mixing sweet chili sauce with salad, but, it’s really good!
My co-worker and I had a little chocolate party today. We decided to compare two bars to see which we liked best.
Scharffen Berger Sea Salted Almond 41% Milk Chocolate
Versus My TRUE LOVE ~ CHOCOLOVE Almonds & Sea Salt in Dark Chocolate.
I had 3 squares of ChocoLOVE and the equivalent of the Scharffen Berger. Both are quite delicious, but, CHOCOLOVE will ALWAYS be my #1 chocolate. You can really taste EVERYTHING it in from the big chunks of almonds to the sea salt to the creamy dark chocolate ~ it’s TOTALLY LOVE 😀 (3 pts).
I <3 Chocolate parties and completely recommend them any time you need to perk up yoru work day 😉
Dinner was the Chef Salad I made up yesterday that was supposed to be lunch today :) I topped it with a Newman’s Own Light Lime Vinaigrette (8 pts)
After eating my salad, I still wanted something else….something crunchy. I decided on these Red, White & Blue Tortilla Chips from Trader Joe’s.
3 points a serving.
Always, always weigh your food versus counting out 7 chips ~ you get so much more 😀
I LOVE Salsa & I LOVE Guacamole so it only made sense to picked up this new Trader Joe’s Avocado Salsa!

After dinner, I decided it was time to get my baking on! I have been wanting to make Gina’s 4 Point Fresh Strawberry Scones ever since I saw her post them.
I had everything on hand to make them, but, the LOW-FAT BUTTERMILK. So, I made my own by combining 1/4 c 2% milk with 1/2 c Fat Free Milk and 2 1/2 teaspoons White Vinegar.
I wasn’t planning on doing step by steps, but, I had to show you a trick she used that is awesome.
You freeze your butter then use the large side of your cheese grater to grate it!
You gently mix it into the dry mixture ~ SO MUCH EASIER than using a pastry mixer!
I almost ALWAYS use an ice cream scooper for muffins and scones. You need the kind with the scraper on the inside. It’s the easiest way to get perfectly divided and sized cones or muffins.
These bake up to be pretty HUGE! I cannot wait to dig in tomorrow morning. Next time I am using Turbinado or Raw Sugar on top to have BIG sugar crystals!

LOVE the wedding idea! Nick and I were going to elope… then we felt bad, told our parents and we’re having a small affair this summer! I never dreamed of a big, white wedding either- so I’m glad we’re having a backyard bbq instead! 😀

And finally- my goal. WALK MORE. I have been SO lazy in the mornings, because I have been so busy- so I am going to try and go for a walk, once a day after dinner when I can. I think it’s reasonable!

Smart idea with weighing your food over counting…I never realized there was much of a difference. And TJ’s has avocado salsa?!?!?! Thank you for showing me that, I already can tell that is going to be one of my new fav. treats from that store!

I love your wedding story, Danica. It’s tradition in my family to elope and I would love to get married at city hall and then have a big dinner with my closest family and friends–no decorations or catering or wedding dress shopping to worry about.

Thanks! I loved our wedding and wouldn’t do it any other way now that I know. I’d rather have my close family/friends that I want there versus having everyone there that you may not want there.
I LOVE Weight Watchers and really am a WW for life. When I really work the program it really works, when I sorta work it, it sorta works. I have been doing just ok so I am maintaining but I really need to get serious and back on the weight loss wagon again so I can look/feel good. I set a new goal for our August cruise and I want to be able to go shopping in my closet to have those tight things fit again….incentive, maybe? Lol.
