Hi all! This morning I couldn’t wait to dive into my 3 Smartpoints breakfast. 1 egg scrambled with a little green onion, cilantro, milk and hot sauce paired with 4 Jennie-O Lean Turkey Sausages and a cutie. This breakfast kept me full for 5 hours – no snacks required. This held true even after my 40 minutes jog/walk on the treadmill. I learned today that while I’m in decent walking and hiking condition, running was so hard. I didn’t love it but I’m going to keep at it until I like it more. I downloaded this free C25K app to start. I like my virtual trainer Constance so far so there is that.
The Husband and I used my birthday coupon at Jersey Mike’s for lunch.
I love, love, love the fact that my mini #7 Turkey and provolone sandwich with the Juice went down 3 Smartpoints on WW Freestyle. That totally left room to share BBQ chips.
Lunch adds up to 11 Smartpoints – worth it!After lunch and a little shopping, we decided to use our gift card and check out the new theater seats at one of our local theaters.
I loved the reclining chairs, kicking my feet up and having coffee while watching Father Figure. The Husband said the seats make him want to fall asleep lol.
I managed to only eat 6 of his peanut M&Ms during the movie and said no to popcorn too.Dinner was my spin on this Weight Watchers Sesame Like Chicken Salad recipe. I really wanted it to have more flavor and depth in the dressing with fun things to eat mixed in the salad.
I grilled chicken breast tenders with a Sweet Bourbon glazed I bought at Apple Hill.While the chicken cooked, I prepped the dressing and the salad. Lettuce X’s2, carrots, cabbage, red bell pepper, cucumber, cilantro, green onions and 1/4 cup cashews.Chop the chicken, add the dressing, toss and dinner is ready.We both loved this salad! It was not only fun to eat with all that crunch, the flavors were awesome: Sweet, tangy, salty, crunchy with smoky grilled chicken.
SESAME LIME CHICKEN SALAD (print it!)INGREDIENTS:
- 4 cups lettuce (mix & match) – I used romaine & baby greens
- 1/2 cup carrots, shredded
- 1/2 cup cabbage, shredded
- 1 cucumber, quartered and sliced
- 1 red bell pepper, diced
- 2 green onions, diced
- 2 Tbsp cilantro, roughly chopped
- 1/4 cup cashews, roughly chopped
- 1 lb grilled chicken breast tenders, diced
- Zest & juice of 1 lime
- 1 Tbsp sesame oil
- 1 Tbsp soy sauce
- 1 Tbsp Hoisin
- 1/2 Tbsp agave nectar or brown sugar
- Splash of Sriracha
- In a large bowl, combine lettuce through chicken and set aside. In a small bowl, whisk like zest, lime juice, sesame oil, soy sauce, Hoisin, agave and Sriracha.
- Pour dressing over salad mix, toss to combine and serve.
