I have been looking forward to THIS dinner all week long ~ I LOVE grilled veggies and shrimp! The BEST part about tonight’s dinner is that it is super FAST and only requires 5 Ingredients ~ Shrimp, The Veggies of your Choice, Emeri’s Original Essence, Extra Virgin Olive Oil and a Lime.
The STAR INGREDIENT was the Emeril Original Essence that Foodbuzz sent me a little while back.
Start off by chopping your favorite veggies into big 1-2 inch chunks.
My Veggie Mix included:
* Green & Yellow Zucchini
* Red & Purple Bell Pepper
* Purple Onion
* MUSHROOMS!
And one of these fun little Thai Eggplants I picked up at the market. The middle looks, well, “seedy”.
Sprinkled generously with Emeril’s Original Essence and about 2 Tbsp Extra Virgin Olive Oil.
BAM! Check out those spices ~ Hmmmm and you can honestly smell them all!
I added the Veggie Mix to my grill basket and shook and cook until it turned out looking
like THIS! MMMMMMM! The Husband and I both stole a mushroom before dinner and LOVED it. It reminded us of spicy pizza ironically.
While the veggies cooked, I prepared my shrimp skewers.
1 lb of cleaned, deveined shrimp
1 lime, juiced
2 tsp Extra Virgin Olive Oil
Emeril’s Original Essence
Combine the above with your shrimp, thread your shrimp on your skewers and pour the rest of the marinade over the skewers.
Grill for about 3 minutes per side or until completely pink and opaque.
I started off with a TON of the Spiced Up Grilled Veggies.
Plus 1 4 oz Spiced Up Grilled Shrimp Skewer! The SHRIMP was fantastic. I LOVE Emeril’s Original Essence Spice. It seriously rocks and I will definitely be carrying this spice on hand at ALL times.
I got super excited when I saw I had TWO extra mushrooms hiding under my shrimp. I tell ya – it’s the little things!
and a 1/2 c Trader Joe’s Organic Brown Rice. I almost topped my rice with Original Essence too but The Husband told me I was going a little spice crazy 🙂
Now here is where I messed up my ratios for BFL today. I was only supposed to pick ONE CARB today and that would’ve been my rice. I couldn’t really wanted the corn and I was hoping it wasn’t that high in carbs. Um ya I had 50 carbs to go with my 31 g of protein with the corn. I would’ve save 22 g carbs by not having the corn which would’ve made the PERFECT ratio. Oh well ~ live, learn and move on! It was worth it – the corn was amazing. Next time I’ll pick one or the other.
All together with a fizzy water and vitamins.
OH and because Lynn told me she LOVES to chew her vitamins in her comments on yesterdays post I had to share this. This is the maker of The Husband’s adult gummy vitamins. They make calcium and Omega chews too! I get them at Target. ~ Just thought I’d let you know in case you hadn’t tried them yet 🙂
The Husband’s Mom stopped by the Orowheat store today and scored some major deals. She was nice enough to share her finds with us ~ Onion & Potato Rolls, Country French Bread & OatBread ~ YUM! I LOVE how she has my back and used her seal a meal so I can freeze them! Hmmmm…..burgers on my FREE DAY might be in order. Although I am seriously eyeing that Oat Bread for my healthy carb with eggs.
Dessert tonight was something fast and simple. I was feeling like I didn’t have enough stuff with calcium today so I had 2 Sargento Reduced Fat Cheese Sticks with a Nectarine.

Ratios: 35% Protein, 45% Carbs (it’s that corn!!!), 20% fat (I was spot on except for the corn *sigh*)
This IS the first day I fit in all 6 meals and was hungry for each one so I am proud of that!
Alright all ~ I am off to catch some zzzzz’s before my early AM wake-up all for HIIT’s and MAYBE Yoga too! *Fingers crossed* I can sleep tonight! More importantly hopefully I can MOVE my legs tomorrow to get them through HIIT’s 😀
