1 Potato, 2 Potato….Bacon Potato Skins!

Happy Biggest Loser day all!  For all you fans out there, OMG ~ How good does Hannah look?! I still wanna say “Go Purple Team” but I know that was last year LOL.  I DO like this years contestants so far though ~ Do any of you have a favorite yet? I am undecided…..

I LOVE that you all were all wanting to be crowned the “Queen of Leftovers” on yesterday’s post.  Each comment totally made me smile and I am glad I am not the only one who thinks food tastes even better the next day ~ casseroles, lasagna and anything with a red sauce for sure.

Breakfast this morning was grab-n-go since I was out of the house by 5:30 AM.

Quite possible my FAVORITE Chobani out there ~ Pineapple!

Plus the last of this week’s watermelon ~ I am SO SAD over that! I can’t wait until Farmer’s Market Thursday.

Believe it or not, this combo kept me full for 6 hours.

Lunch today was “portable” so I could take it to my Weight Watchers a work meeting and have lunch with the group.  I LOVE that everyone brings their lunch to eat together before and during the meeting.  I really like the leader too.

Today started with my go-to I don’t have time to make lunch Egg Salad Sandwich (it takes about 2 minutes to make if you grab from the hard boiled egg supply you made at the beginning of the week).

I bulk up my egg salad by adding 1 egg white for 0 points+

* 2 slices Trader Joe’s Fat Free Multi-Grain Bread (3 points+)

* 1 Hard Boiled Egg plus 1 Egg White (2 points+)

* 1 Tbsp Reduced Calorie Mayo + 2 tsp mustard (1 points+)

* Sea Salt & Black Pepper to taste

I totally NEED to restock my crushed red pepper flakes to add them to this Open-mouthed smile

I had planned on getting the Garden Veggie Soup from the Café, but, changed my mind as soon as someone mentioned these Roasted Salsa Multi-Grain Crisps.

I am usually not a HUGE gan of WW products because the ingredient lists are HUGE and not always recognizable.  But, these were worth trying to me.  They are pretty tasty, but, I wish they were spicy.

Dessert!

Train snacks ~ Lowfat Sargento String Cheese & a white nectarine (1 points+)

When I walked in the door I was starving!  I decided to make up a big bowl of homemade pickled veggies to snack on while I made dinner. (0 points+)

I realized as I started cooking dinner tonight that I must be missing Tracey of Tj’s Test Kitchen because I have been making meals we used to make together.

I even included garbanzos on my salad because she always gives me those Open-mouthed smile

We usually ALWAYS start with a BIG SALAD:

  • Organic romaine
  • Broccoli Slaw mix
  • Cucumbers & snap peas
  • 1 1/2 Tbsp dried cranberries (1 points+)
  • 1 Tbsp sliced amonds (1 points+)
  • 2 Tbsp chick peas (1 points+)
  • 2 Tbsp Trader Joe’s Spicy Low-Fat Peanut Vinaigrette (2 points+)

For those wondering, you find the TJ’s Spicy Peanut Dressing in the fridge section.  Litehouse also makes a version of it that is only 1 points+ for 2 Tbsp and can be found at most grocery stores.

Then move onto some delicious creation where we have made over one of our favorite “Not So Healthy” recipes, like Healthy Nachos or our Mexican Inspired Sweet Potato Skins!

I used regular potatoes for The Husband because he won’t come near a sweet potato.

There is just something about crispy roasted sweet potato skins that pairs so well with the smoky bacon, salty sharp cheddar, spicy jalapenos and cool creamy avocado.

*LOVE*

I pretty much cooked them the same way we did last time only using thicker slices.

  • 5 oz sweet potato slices, cooked
  • 1 oz reduced fat sharp cheddar
  • 2 slices real deal bacon (you could use turkey bacon)
  • Green onions, tomatoes, jalapenos
  • 1/8 avocado
  • 3 olives, sliced
  • 1 Tbsp 0% Plain Greek Yogurt & Hot Sauce

My ENTIRE plate is 10 points+ using REAL bacon (8 points+ if you use turkey bacon) and seriously worth every single one! 

You could totally have this for BREAKFAST too ~ after all it has bacon Winking smile

Q’s:

Are you a sweet potato or regular potato fan?

I LOVE yukon gold & red potatoes and never used to like sweet potatoes growing up.  Once someone showed me you didn’t have to have them from a can and candied, but, you could have them as “fries”, I fell IN LOVE.  I think they appeal to my favorite flavor combo ~ salty & sweet.

    Until about 5 years ago, I only liked regular potatoes. But I must say that now, I love a sweet potato and a regular potato just the same. And I am SO making those potato skins! Both versions looks yummy!

    I grew up on red potatoes. Seriously, my mom mashed, baked, oven roasted, etc, red potatoes. We NEVER had the regular go to russets, and I like them better anyway. Plus, they are healthier for you. But anyway, I’m a regular potato fan, but over the last few years, I’ve become a fan of sweet potatoes. And like you, it started with sweet potato fries! Whoever started that was a genius!!!
    I’m definitely going to have to try these!!!

    Love sweet potatoes and yams make wonderful pies and potato chips, serve with slow roasted pork sandwiches. Amazing……

    Unfortunately I am not enjoying this season’s contestants. I was hoping Bonnie would be the one voted off last night but she received the highest percentage of weight loss so I was very disappointed. Does anyone else find her very annoying? Enough already with the faces and the tears.

    I love any kind of potato but my very heath food conscious friend got me into PURPLE sweet potatoes. No kidding, they are so sweet and yet nutty. I order them from Hawaii and buy them by the case. Lots more vitamins. They look like a sweet potato in shape, russet in color but inside is vivid purple!

    Sadly there isn’t a potato grown that I”m not a fan of whether it is red, white, sweet, or somewhere in beween. I love them fried, boiled, mashed, or baked. But my love affair with the potato has had to come to an end since it was interferring with my weight loss. Now I will only occasionally fix a baked sweet potato and share half of it with my husband.

    I love any kind of potato – period! I am having trouble imagining cheese on a sweet potato. I guess I will just have to try it sometime! I do know this looks AMAZING, and it’s definitely something I know I can eat on a non-sweet potato. ha

    One of my favorite TJ finds through your blog is the Spicy Peanut Dressing. I absolutely love the flavor and while I’ve always doused my salad with dressing in the past, this dressing is so flavorful that 1TBS does the trick!

    I like both kinds of potatoes – but tend to lean towards the sweet potatoes. Nacho potatoes is a great idea. I always love your creativity in the kitchen.

    I’ve tried and tried to like sweet potatoes, because they are soooo good for you, but I just don’t. I love, love white potatoes any which way you can fix them! 🙂

    for those who don’t like sweet potatoes – my favorite way of cooking is to dice them up, toss with a little olive oil and season – my current favorite is cumin and chilpotle powder and salt and roast them in a hot oven for 35-45 minutes – I like them browned! yum!
    also, I recently got a Pampered Chef Microwave chip maker – am loving that with regular and sweet potatoes – even tried it with butternut squash! Danica, have you tried that? I actually weigh my potato slices out before I put them on so I can count my points – usually comes to about 2 points for one tray of chips – best when they are still warm out of the microwave….. my only problem is they took much more time then the directions suggested – 5 minutes but a healthy snack for me and cheaper than all those baked chips out there!

    I’m craving eggs so so bad, especially after visiting your and biz’s blogs today! I’m a sweet potato gal.. and might go pick up one from the Market here shortly to go along with my dinner! So happy campus serves plain baked sweet potatoes 😀

    I like regular potatoes better than sweet potatoes. I basically like them in all forms – baked, roasted, mashed. They’re tasty in nearly any form.

    I just tried Guy Fieri’s Chipotle Salsa – I use that sh*** on everything. Will put it in my plain Greek Yogurt on my sweet potato nachoes. I can’t wait to make it but I have three servings of Bubble Up Pizza left – have you ever frozen that?

      It’s probably too late to answer you now, but, yes the Bubble Up Pizza Casserole freezes well. I freeze them in individual servings.
