Hi all! Some days you win some and some days you lose some. This morning I decided to venture out making a new Hearty Slow Cooker Pork & Sausage Cassoulet recipe just so I could experiment with making 2 Smartpoint Garlic Bread. I thought about our dinner all day long and couldn’t wait to get home to see if my science experiment worked.
But, before I get ahead of myself…Breakfast!
Nature’s Own Butter Bread topped with 1/2 Tbsp whipped butter & a fried egg (3 sp) with watermelon on the side.3 hours later, I was hungry so I had a banana and one of my nectarine muffins (3 sp).True story – My co-worker and I planned lunch at Work of Flame because it was near a gym we want to check out. We had a delicious lunch but decided we will check out both gyms tomorrow lol.
Won Ton Soup (2 sp).3 Chicken Potstickers (5 sp).I skipped the rice and ate the steamed veggies with Kung Pao Chicken. (8 sp plus 1 for my fortune cookie).My other success today – attending our July Birthday celebration and passing up having a slice of cake, peach cobbler and ice cream. I was so satisfied by lunch it didn’t even tempt me.
About that cassoulet….I wanted to try using my Slow Cooker in the Summer making The Husband a meaty, low point dish.
Pork, Hot Turkey Italian sausage, beans, mushrooms, veggies, fire roasted tomatoes, herbs and wine…sounds good, right??The real reason for making this recipe though is just so I could make garlic bread for dipping using this new Trader Joe’s Roasted Garlic Herb Butter I picked up.
1 Tbsp is 4 Smartpoints. I took half a sweet french baguette then sliced that in half. This baguette is 7 Smartpoints for half.I slightly melted 2 Tbsp of my garlic herb butter to spread it. Then sprinkled the bread with paprika and parmesan.
Bake at 400 for 5-6 minutes, slice into 16 pieces.Each buttery, garlicky piece is only 2 Smartpoints and it’s so good that it’s hard to stop at 2.It’s a good thing the cassoulet is only 3 Smartpoints a serving. I didn’t love the cassoulet as much though but I think it’s just not my thing. Maybe it needs to be winter to appreciate it lol.29 Daily WWFreestyle Smartpoints, 7K steps

I love your blog and the time you take to consistently post – thank you! One thought I always have and I’m finally sharing – is why don’t you have more than one egg in the morning? They are 0 points and the extra protein might keep you satisfied longer? Everyone is different, but just thought I would ask!
