Hi all! How was your weekend? Our weekend was the perfect balance of fun, relaxing and getting things done. I lost 1.2 lbs this week, stocked up at the farmers market and did a little prep today to make next week a success too.
Before picking up our nephew and heading out to the Sacramento Antique Fair, I had a Sandwich Bros. Turkey Sausage, Egg White Flatbread (4 sp) and 1/2 a nectarine.We all grabbed Starbucks for the drive….seriously, the best Grande Iced Nonfat Latte with caramel on top I’ve had in a long time (3 sp).
After walking the fair and a coin show, we headed over for lunch at our nephew’s choice at the Squeeze Inn. Truth be told The Husband loves this place too.
I felt proud that I resisted the cheese skirt bacon cheeseburgers they got….
I picked 2 chicken tacos thinking that would be healthier – 2 chicken tacos. 2 corn tortillas with chicken breast, lettuce, tomatoes, salsa, avocado, jalapeno and cheese.
Little did I know, that cheese would mean cheese skirt! I can’t believe I am saying this, but, the cheese while delicious, was too rich. I had a quarter of it eating my tacos and handed of the rest over to them to devour (10 sp).I did have a handful of the community fries – worth it (counting as a small fast food fry – 7 sp).
When we got home, I whipped up this Tortilla, Pepper and Egg casserole for breakfasts this week.
I also made a batch of 2 WWFreestyle SmartPoint Cinnamon Banana Muffins.
Remember this recipe? I made the recipe into 12 muffins versus banana bread.To balance out our rich lunch, I swapped our dinner plans to make this 4 Smartpoint dinner.
