20 Minute Crispy, Buffalo Chicken Salad

Happy BIGGEST Loser day all!!!  I am SO PUMPED that there are NO SPEECHES on tonight so I get my full 2 hour BL Fix.  I honestly think that TV stations should implement a little button that says “Click HERE to watch your FAVORITE TV SHOW or click HERE to watch the speech” so you have a CHOICE in the matter…some speeches I wanna hear and well others….not so much!  Wouldn’t that be awesome?

Ok….moving on because today involved some pretty AMAZING food.

I found these NEW Morning Star HOT & SPICY Sausage patties at the store this weekend!

Still just 2 points+ each ~ not too spicy either…just right.  I LOVE them!

I BUILT the BEST breakfast sandwich this morning.  Almost as soon as I typed to you all last night about my FAVORITE Eggwich and described this sandwich, I KNEW I had to have it.

I mean….afterall, it has 1 Tbsp of that TJ’s Jalapeno Cheddar Pub Cheese melted on TJ’s Fat Free Multi-Grain Bread.

Topped with a “Fried Egg” and 1  Hot & Spicy Morning Star Sausage Patty cut in half for maximum covereage.

AMAZING!!!!  Cheesy, spicy, eggy, crunchy…so much so my mouth is watering all over again.  (8 points+) and worth every single one!

I have been SO EXCITED for my lunch day for like a two weeks now because my co-worker picked PICA PICA KITCHEN as the launch she wanted me to treat her to.  This place is PHENOMENAL ~ if you are ever in Napa or San Francisco ~ BE ADVENTUROUS and TRY THEM…..I am IN LOVE with Venezuelan food and could totally eat this all the time!

 

Here is what I do when I do not know the stats of the foods I am eating.

1.  Search on Weight Watchers online by food type and/or comparable items ~ sort of

2.  Search the Web to see if they have a menu/nutritional information – nope

3.  Search the “menu item name” nutritional information looking for something comparable ~ this usually works and did today!  I found a decent list MyFitnessPal for Venezuelan Food.

4.  When all else fails….break down the ingredients (cheese, beans, etc) and calculate the stats based on that.  I always try to estimate high to be on the safe side then work out a little more and be good on the other days to offset it.

 

Everything you see below I shared equally with my co-worker ~ I LOVE her because she likes getting small bites and sharing with me Open-mouthed smile

We picked the Medium Sized Arepas ~ the Pabellon and Pernil to share with an Olive Oil Garlic Sauce.  The meats are Smokey, yet, well seasoned and the bread is like a grilled corn tamale & tortilla crossed. (6 points+ for my 2 halves – high estimate)

The big yellow thing is a sweet roasted plantain ~ The Pabellon (beef) is my FAVORITE!

The Pernil (Pork) was tasty because it comes with AVOCADO!!!

We also picked 3 of their mini Empanadas in ~Queso, Chicken, Beef and Tilapia….they were just “ok” to me…I LOVE the Grilled Corn Flat Bread more than the “fried” corn bread…crazy, huh?  I have 3 halves (6 points+ estimate)

 

Roasted Garlic Yucca Fries with Spicy Chipotle Ketchup ~ OMG ~ LOVE!!!  I have 4 fries and could’ve totally not shared these at all LOL…..These are like the Gordon Biersch Garlic Fries, but, better because the Yucca makes it taste AMAZING!  (8 points+ estimate)

I LOVE the servers at Three Twins!!!  I really really wanted to try the Strawberry & the Madagascar vanilla flavors, but, I told him I could ONLY have one scoop ( I didn’t want to use ALL my points+ for the day at lunch LOL).

So, what did he do? He busted out their 1/2 cup mini size and packed it full of my 2 flavors!!! (5 points+ calc’d on the vanilla flavor)

When I got home I have the BIGGEST box I’ve ever seen waiting for me on the porch from one of my MOST FAVORITE people in the world ~ Janetha of Meals & Moves!

OMG ~ how adorable is this condiment serving set she sent me for my birthday!!  I totally cannot wait to bust it out with Butter Boy & Butter Girl!  Thanks JanEtha ~ I LOVE you!!!

Dinner tonight involved another NEW to me Trader Joe’s product I found when I was making up my Trader Joe’s Favorites List for you all.

Breaded Chicken Tenders!!!

3 Points+ each for chicken that tastes “fried” and herby a little like KFC The Husband said.

Bake at 400 for 20 minutes.

Dunk in some heated Buffalo Wild Wings Medium Sauce that Liz of the Not So Skinny Kitchen sent me awhile back because she is AWESOME like that!

Tadah!!! HUGE 3 point+ Boneless Buffalo Wild Wing Chicken Tenders that I actually think taste better than the real deal!

Since I wasn’t super hungry, I only used one tender to whip up my Crunchy Buffalo Chicken Salad.

* Butter Leaf Lettuce

* Cucumber

* Mini Orange Peppers

* Celery

* Cherry Tomatoes

* Sprinkle of Green Onions

* 1/8 AVOCADO (1 point+)

* 1/2 Sargento RF Colby Cheese (1 point+)

* Crispy, Crunchy, Spicy Buffalo Chicken Tender (3 points+)

* 2 Tbsp’s Annie’s Cowgirl Ranch (3 points+)

ONE FANTASTIC SALAD!!!

Dessert during the Biggest Loser was a big bowl of pineapple.

Today was 100 million percent worth busting into my WPA and I counted it ALL!  I’d totally eat it all over again Open-mouthed smile

I am hoping to have my Super Bowl Favorites List up tomorrow!

    There’s a wonderful South American restaurant not too far from where I live in Japan. It’s great and has a ton of flavor! It seems similar to the restaurant you’re talking about.

    Now I have to add the breaded chicken tenderloins to my Trader Joes grocery list. They look soooo good. I try not to miss American Idol even tho that sounds nerdy, I know.

    I tried those breakfast sausages recently too. I was sad that they weren’t hot or spicy at all. Maybe i’d like them more inside something.

    Danica- How totally fun!
    I just found your website and love it!! Your enthusiasm, down-to-earth approach and great food ideas are very inspiring. Are the points you are mentioning from the new Points Plus? I joined WW 4 weeks ago and have lost 9.6 pounds and I find that a variety of meals and exercise are key! I think it is really “kewl” that you include close-up photos (and even the nutrition panels) of the food (and of course, photos of your man). Thanks! Now, we are all wishing we were closer to a Trader Joe’s… you should get a commission from them. LOL. When the ice goes away, maybe I will take a TJ road trip!

    OMG! You always find the best products !!! I NEED to find those hot n spicy soysages. I eat a soysage patty about 3-4 times a week and loooove all things spicy. Those were made for me. Thanks for sharing. Gotta look for those. OH! ..and I finally found turkey pepperoni!? YES. Def time for another pizza night 😀

    A show I watch every week no matter what is Top Chef… always makes me hungry though ;P

    I wanted to tell you that I tried broccoli slaw for the first time ever because I kept seeing it in your blog. I got the TJ’s dressing you eat with it, too, and it was AMAZING! So good! Thanks for such a healthy, easy idea to get me eating more veggies. I am following WW, too, and it is so nice seeing your food with the points values listed. It is fun and helps keep me motivated.

    Hi Marlene,

    I just used Buffalo Wild Wings Classic Medium Sauce that I bought from their restaurant. You could also use Frank’s Hot Sauce – both are delicious in my book. Just heat on the stove before dipping and you are good to go.

I switched to posting points+ on November 28th, so anything since that time is posted as “points+ or PP”. I am slowly working to convert my recipes to Points+, however, I have not done it for everything yet. I do include the nutritional information so you should be able to calculate the points+ for any recipe you see on my site.
