Happy Monday all! We had a fun day off celebrating the long weekend. I feel super proud of myself for getting in a workout instead of just thinking about. Yesterday my Fitbit told me my activity last week was very light and I should think about getting in 30 minutes a day. That was just the nudge I needed to get movin’.
I did a 1-2-3 treadmill workout that went like this.
Warm up 5 minutes.
Walk at a moderate pace, then bump it up to a medium – fast past, then fast in the following intervals.
1-1-1, 2-2-2, 3-3-3 My speed ranged from 3.8 – 4.0 mph
Cool down for 5 minutes.
I felt so good after even though it was so hard during as I kept thinking OMG, I am so out of shape. The Husband reminded me – none of that matters – what matters is you took a step in the right direction. Truth!
We had a delicious breakfast post workout.
I freeze this Trader Joe’s real deal 1 point bacon in packs of 3 – 4 slices just for mornings like today when we want it for breakfast. It’s perfect for recipes that need a little bacon and it helps keep your portions in check as you can only eat the 3-4 pieces.
1 slice bacon, 2 scrambled eggs and berries (1 Smartpoint).After breakfast we made a Starbucks run. Tall nonfat cappuccino with caramel on the foam only (2 sp).I used my Instant Pot today to make this 7 minute Instant Pot Egg salad.
6 eggs on the steamer rack, 1 cup water – seal and pressure cook on high for 7 minutes then quick release.
I peeled 4 eggs then combined them with 1 tsp mustard, 2 Tbsp light mayonnaise, salt and pepper.
I topped 1/3 of the mix with paprika & crushed red pepper flakes served on Oroweat Italian bread (3 sp) plus 1/2 a sumo orange.I had 3 cups unbuttered movie popcorn for my afternoon snack while watching The Upside with The Husband. (5 sp). We both loved the movie.
We made Simple Sliders for dinner with this delicious Greek Corn Salad. I cannot wait for summer to make this recipe using corn in the Cobb. I cut the oil in half and added lemon juice plus zest. (2 sp)I used 1 lb 93% lean ground beef with diced red onion, garlic salt and pepper to make 8 sliders. Each slider is topped with 1/2 an ultra thin slice cheddar, ketchup, mustard and a pickle (5 sp).So, so good and I was full after just one.18 Daily WWFreestyle Smartpoints, 13K steps
I am still feeling satisfied so I will have 4 roll forward points.

Lots of yummy eats! Those sliders look amazing. Might have to make them. i used to read your blog a few years ago and kind of stopped reading ALL blogs..left the blog world. So glad that I found yours again! <3

I know exactly what you mean as I took a few years off in the middle too. Sometimes you just need do that especially when life gets crazy and it all becomes overwhelming.
