A day of nothingness with awesome eats!

Yesterday was such a day of nothingness, but, I had some fantastic eats!  I am so glad it’s a LONG weekend because I woke up STILL tired and pretty much feeling like doing nothing.  I decided to put my workout off and whip up a breakfast that I have been wanting to make ALL week long.

HAM & CHEESE EGG CASSEROLE from the Eating For Life Cookbook

This is so easy to make – you pretty much put everything in a dish, bake and enjoy!

2 c Western Potatoes (hash browns with potatoes, onions and peppers)

1 package Trader Joe’s LEAN Canadian bacon, chopped

5 button mushrooms chopped

2 green onions, chopped

1 1/4 c Egg Beaters

1/2 c Fat Free Milk

A bunch of dashes of your favorite hot sauce

Sea salt & pepper to taste

1/2 c low fat cheddar cheese

Preheat oven to 350 degrees.  Spray a 9×13 pan with nonstick spray.  Add the hash browns, ham, mushrooms and onion.  Beat eggs through salt & pepper together and pour over the casserole.  Sprinkle with cheese and bake for 40 minutes or until the eggs are set, the cheese is melted and it’s slightly browned.

The book says 4 servings, but, that is HUGE so I say 6 servings.  The Husband absolutely LOVED this which is surprising since he doesn’t do egg beaters at all.  I though it was pretty delish but next time I’d definitely add in a ton of vegetables (sautéed in a pan for 4-5 minutes to get the water out) as well.

It doesn’t look super pretty coming out of the oven…..

Meal #1 @ 7:45 am  I topped my casserole with one of my FAVORITE homemade salsa.

Best Homemade Fresh Salsa

12 Firm Roma Tomatoes (or mix/match a variety of tomatoes)

1 Green Bell Pepper

1 Red Bell Pepper

1 Medium Red Onion

1-4 Jalepenos

1/2 T Garlic Salt

1 T Season Salt

1 T Sucanat, Agave, Sugar or whatever you prefer to sweeten with

Cilantro to taste (about 1/4 – 1/2 c)

Chop all items and mix. I used my mini chopper (you can use a blender or food processor) to chop the items into small chunks. Do not liquidify as this is supposed to be chunky like pico de galo.

This makes a large batch – I use it for everything during the week – breakfast burritos, casseroles, tacos, burritos and of course chips for snacks. I am so making some homemade tortilla chips for dipping soon!

So, I learned one thing about my salsa that I may not recommend for appearance.  I used a variety of colors in peppers and tomatoes from what i got from the market.  YELLOW + RED + GREEN = BROWN – not such a pretty color, but, the FLAVOR is amazing.  I can seriously scoop it up and eat it straight.

After letting breakfast rest, we did a little shopping and working around the house.  I STILL wasn’t feeling like working out when it was time for lunch.

Meal #2 @ 12.05 pm was a modified version of one of my FAVORITE sandwiches to make it Body for Life friendly.

I toasted up some Whole Wheat Oat bread and added a little mashed avocado, sea salt and pepper.

Plus a thick slice of one of my farmer’s market heirloom tomatoes.

Organic romaine lettuce

4 slices of Trader Joe’s LEAN Turkey bacon (120 cal, 24 g protein,2 g fat!)

All together for a super crunchy, flavorful BLTA.  YUM!!!!!

I had a side of crunch ~ red pepper and cucumber slices sprinkled with pepper and sea salt.

Cut in half because I am like a kid and LOVE to eat my sandwich halves.  This lunch totally filled me up and was completely satisfying.  I definitely see a repeat in my future 🙂

Insert more lounging around, watching the movie Twisted (so good) and not really doing much of anything.  Then, it was time to snack again – yeah – Meal #3 @ 3:15 pm.  1 C StoneyField 0% Oikos Strawberry Fruit on the Bottom Greek Yogurt with 1/2 c low fat cottage cheese.   WOW – I LOVED this yogurt – I’ve never had the Stoneyfield Oikos Brand before but I have to say it rocked my world.  LOVED mixing the fruit it and it was super creamy and thick.  I will definitely have to buy this again – YUM!

I did manage to get outside for a bit and snacked on some of the cherry tomatoes from our Organic Cherry Tomato plants – YUM!  I knew I had to take a picture so I couldn’t just eat them right there 🙂

The Husband actually put in a request tonight for Hot Links and my Healthified Potato Salad for dinner. I might have had a couple bites for flavor control as I made it 🙂   I debated making a full on dinner for me, but, in keeping with the theme of the day, I opted for simple.  I pulled out  my FAVORITE chicken burgers.

That have amazing nutritionals and 100% CLEAN ingredients.

I grilled up my Trader Joe’s Chile Lime Chicken burger and put it on a Orowheat 100% Whole Wheat Sandwich thin – 1/2 with Annie’s Ketchup/Mustard and the other 1/2 with cucumber slices.  MMMMM – Sweet, salty, crunchy, GOOD!

I have been craving Kale chips so I whipped up a BIG batch of these using 4 kale leaves while I grilled everything.  I had this x’s 2 and dipped in more ketchup.

All together with some Perrier Fizzy Water – it was the perfect dinner!  I am seriously IN LOVE with kale chips and cannot get enough of them.  I already thinking about how I can incorporate them into my next meal 😀

After dinner we lounged around more and I decided not to blog, but, to watch Disturbia with The Husband.  Such a GOOD movie and totally intense!

Can you guess that my BFL workout never happened today yet?!  I know I am a morning person with my workouts and typically will not fit it in if I wait.  I think I really needed to just slow down for a day and relax.  It was nice and I let any guilt go about not working out so I could enjoy it.  No worries though, a double workout was put on my todo list for Monday to make up for it!

STAT RECAP:

Calories consumed: 1,190

Calories burned: 2,743

Steps taken: 8,839

Ratios: 39% Protein, 41% Carbs, 20% Fat

WEEK 2 RESULTS:

As promised, I lost .6 lbs this week (although peaking at the scale this morning, it is showing 1.8 lbs – yahoo! 😀 Can’t wait for WI next week!)  I did take my measurements, but there were not any significant changes in 2 weeks 🙁

I’ll be back later tonight with how today went down – so far, it’s rockin’ and I am full of energy!

    I am very impressed with the wl…but still a little concerned about your low calorie intake with all the activity
