A “POP” (Perfectly on Program) Kind of Day!

Happy Weekend All!  I promise I didn’t disappear on you all….it was just a combination of so many things.  I am pretty sure if I could NOT blog using Windows Live Writer, I’d NEVER blog.

I ran into a few issues with my site on Thursday and it took me 3 HOURS for one post which included doing it manually.

I am sorry the archives is currently not working, but, it will hopefully be fixed when the new layout gets rolled out (I am shooting for this week!)

It all resulted in one big headache literally and I fell asleep last night at 9 pm (I am old LOL).

Anyway, I am refreshed and back in action with TWO FULL DAY recaps and a ton of deliciousness for you all.

FRIDAY

Can I just start off by saying that I think yesterday is going down in my BEST POP (PERFECTLY ON PROGRAM) DAY with the MOST DELICIOUS EATS I’ve ever had?!

I was up 1.2 lbs at weigh (totally deserved after eating like 1/2 a bag of Kettle Korn)…but, in other good news, the scale this morning showed me back down plus a 1.6 lb loss…..MOTIVATION to maybe go to a meeting before I leave for BLOGHERFOOD!!!

“Tropical Fruit Salad”

I finally got my Coconut Dirty Latte Fix (1 pump mocha, 1 pump coconut, nonfat, decaf latte) (4 points+)…I think I am going to try it with only coconut next time for fun.

I worked and worked and worked until I headed over to TJ’s Test Kitchen for lunch.  When a delicious cook like TJ offers to cook lunch, I am ALWAYS there Open-mouthed smile

She greeted me with FIZZY WATER!

Pomegranate fizzy water to be exact.  I totally drank the entire bottle.

Plus my new obsession of citrus slices in my water.  I honestly think I drink 2 x’s the water when there is an orange. lemon or lime slice in it.

I was DROOLING over the 2 points+ Turkey Meatloaf Muffins that TJ shared on Friends for Weight Loss and made a comment hinting she should make them.

Not ONLY did she make them, she took it a step further making a new recipe that involved STOVE TOP STUFFING….Click HERE to get her recipe for these 3 points+ Muffins.

I am pretty sure I’ve NEVER had a meatloaf that I didn’t want ketchup with, but, these filling Turkey Stuffed Meatloaf Muffins have so much flavor they do not need any!

I was in charge of the salad assembly (she already had everything cut up!)

I topped mine with Lite House Spicy Peanut (Like the Trader Joe’s version I LOVE).  Our entire pile of salad was only (3 points+)

TJ was waiting for her furniture to be delivered and needed some help moving it around.  So I agreed to hang out there and work while she worked and waited….make sense? LOL.

Mid afternoon snacks involved this HUGE bowl of fruit that we both managed to devour.

Plus, we split the sample she got of the New Weight Watchers Cinnamon Pop Chips.

I am SUPER PROUD of Weight Watchers for using REAL INGREDIENTS in these.

You actually get a lot in the bag. I LOVED the vanilla yogurt coating and they actually reminded me of LIFE Cereal.  I actually went out and bought 2 boxes after trying them.

The movers called and said they wouldn’t arrive until 7 pm so we decided to GET MOVIN’ to pass the time.

I am completely 100 MILLION % IN LOVE with the Wii and Wii Fit Plus!!!  Well other than it telling me I am older than I am Winking smile

We actually do NOT own a Wii because The Husband always says that if he is going to play a video game, he wants to sit down to do it…..

I ran, stepped, I hula’d and I ran…..I TOTALLY WANT a Wii now!

Hula hooping totally made  my bum and hips burn in a good way even if I did get bonked on the head when TJ threw her hula hoop at me.

Since TJ was on a cooking role, she decided to whip up a delicious dinner for us.  All she has to do was mention bacon, cheese and sweet potatoes!

We baked the potatoes in the microwave for 8 minutes each.  Then, sliced in half, scooped out and tossed the insides (that was hard!).

Sprayed with nonstick spray and seasoned with salt & pepper.

Baked at 450 until crispy, about 10 minutes.

Topped with Trader Joe’s peppered turkey bacon, LF Cheese and green onions then broiled for 2 minutes.

3 points+ each (I had 3!)….delicious…..My favorite is by far the sweet potato….salty, sweet, crunchy, cheesy…..GOOD!

I think I pretty much just want to come live with TJ….her fridge was stocked with so many good fruits/veggies, we made up another delicious salad.

I finished the night off with a few Guittard Milk Chocolate Chips…A Perfectly ON PROGRAM day with ZERO BLT’s!

SATURDAY

This morning I was up bright and early with good intentions of posting.  But, I got busy checking off the todo’s on my list and then spent the remainder of the day working on my NEW SITE….You all are going to LOVE, LOVE, LOVE the recipe organizer….I just have way too many recipes to organize and calculate the points+ LOL.

The folks at I Can’t Believe It’s Not Butter challenged me to try out their Whipped and Creamy version to see if I LOVED it the way I do my Whipped Butter.

No Trans Fats which is a HUGE improvement in my book!

It’s 2 points+ per Tbsp. Overall the flavor isn’t bad…It is definitely lighter in consistency and better flavored than margarine.

I whipped up Sausage Egg-Wiches for The Husband and I, but, told him I bought pre-cooked patties (they were Morning Star Hot & Spicy).  He didn’t buy it, but still ate every bite and said it was better than McDonald’s…I would hope so! LOL Smile

I think my egg and sausage looked like an alien face maybe with the tongue sticking out.  I probably need to get out more. (8 points+, including 1 tsp of Whipped ICBINB)

The Husband called me mid morning and asked if I wanted to get “dirty”….But, not like that….at Starbuck’s you all Smile with tongue out (4 points+)

I actually managed to go to 6 stores and the post office in 3 hours before I came home to lunch courtesy of Tracey.

She sent home leftovers and I totally do NOT want to share these with The Husband.  Maybe I can freeze them so he won’t notice they are in the fridge. (6 points+)

Plus a big organic mixed greens salad.  As I was eating this I started thinking I should have a big salad with or for lunch every day.

* 2 cups Organic Mixed Greens

* Organic carrots and cherry tomatoes

* 1 1/2 Tbsp Chick Peas (0 points+!)

* 2 Tbsp TJ’s Corn & Chile Salsa (1 points+)

* 1 Tbsp Sunflower Seeds (my new addiction!) (1 points+)

* 2 Tbsp TJ’s Spicy LF Peanut Vinaigrette (2 points+)

The other thing I am thinking I NEED to start doing is having a big bowl of fruit for my afternoon snack.  It really cures your sweet tooth and fruit is so delicious right now.

The Husband ended up working late and I really wanted to wait to have dinner with him so I grabbed another snack 3 hours later.

WW Cinnamon Pop Chips ~ You really do get a lot in the bag for 2 points+ and they actually held me over for 2 more hours.

I planned salads for us but when The Husband told me he didn’t eat all day I had a feeling that wouldn’t work.  I met him at Chipotle for the usual.

13 points+ and worth every HEAPING point.  I <3 Chipotle & their Guacamole!

You can calculate the nutritional information at Chipotle Fan for any combination at Chipotle – then calc the points+ – LOVE it!

Phew ~ THE END!  Tomorrow we are heading out to do some shopping, maybe see a movie and get ready for ATLANTA!!!

    WOW, how much can you stuff into a post, LOVE it! Lots of good things for me to try!! Have to make those turkey minis, and have you ever used the Brummel & Brown spread? Do you think the ICBINB is better? Those sweet potato
    ‘s and your salads look so divine! I always get a big bag of sweets at BJ’s, gotta try these! I’m also gonna try almond milk over the new WW cinnamon pop chips; I use it over the Quaker minis creme brulee, and it is a delicious, sweet snack! Thanks for all you do Danica, you have helped me to stay focused and on track with my food, now if I could only follow your exercising 🙂

    I had such a YUMMY day with you too! I loved that we had delicious foods like meatloaf & potato skins ALL ON PLAN! 🙂 YUM!

    Wow, Thanks for pointing out that those pop chips are made of natural ingredients. I had the sample at WW the other day and LOVED them, but I always shy away from buying their stuff because of the preservatives, etc. Thanks for letting me know!

    Your sausage muffin cups are so good! I made them with meatless Italian sausage, red salsa, egg whites, 1-point whole wheat tortillas, fat free mozzarella. (that’s what I had in the fridge 🙂 Something about anything made in muffin cups is satisfying……

    WW gave us a sample of the barbecue popped chips. I was thinking that they might make an interesting coating for chix breast or fish, instead of breadcrumbs.

    Sorry you were having such a headache with everything and you deserve days off anyway …. with the busy life you lead you do so much and believe me it is APPRECIATED!!!! Keeps me motivated and I look forward your emails in my inbox everyday and they and you inspire me. I am liking the looks of the mini turkey meatloafs so on the list to make they go :):)

    Congratulations on having a wonderful POP day! Those always feel soooo very good. I used to be able to do them all the time but I find I’ve been slacking when it comes to bites and licks. I really need to get back to basics but I find myself just so hungry all the time!

    Your egg-sausage alien face made me laugh. I totally see it.

    Here’s to having another POP day!!

    HI Gail,

    I have tried the Brummel and Brown Spread, but, it’s been awhile so I am not sure I could compare. If I remember right, I liked them both the same. I am still a real deal lover…a little goes a long way and you get 1 Tbsp of Whipped Butter for the same points+ value.

    Everything we ate was awesome…I could totally do it all over again. I never thought to add milk, but, I bet it would be good with the pop chips.
