And now for Mc Ribbs…..

I am totally kidding ~ we did make ribs tonight, but, they were nothing like the franken McRibb meat.  I couldn’t resist the title after yesterday’s Better Than a Big Mac Post.  I am glad to see you all dig burgers as much as I do.  Whether they are eaten straight up, on a salad, in a wrap or on top of a bun, there is just something about burgers that make them incredibly delicious. 

Today was such a hungry day ~ I never really seemed to get “full” no matter what I ate.  I think this is the first day all month doing Simply Filling that I felt hungry like this.  I am proud of the choices I made and glad that I stuck with The Plan.

Even though I was rushing to get out the door this morning, I made sure I whipped up an Oatmeal Protein Pancake to take with me on the go.

Only this time, I made sure I didn’t flop it. (2 WPA for 1/2 Tbsp whipped butter & 1 Tbsp Maple Syrup).

Usually my pancake keeps me full for so long I have to remind myself it’s lunch time.  Today, I was hungry about 3 hours later so I snacked on a hard boiled egg.

Lunch was a repeat of yesterday’s with one change ~ I used cherry tomatoes from our garden!

Topped with 1 big cup of Creamy Chicken, Carrot Raisin Salad.  For those who asked for the recipe, I will post it this week. ( 2 WPA for 1 Tbsp pecans and raisins).

3 hours later I was ready for my lite string cheese and watermelon.

But, I wanted more……I have been eyeing & ignoring the jar of Biscoff that sits on my desk for 2 weeks now.  Today, I NEEDED it Open-mouthed smile 1 Tbsp = 2 WPA

Dinner tonight is one of my favorite meals to satisfy my "BBQ Pork Rib” craving.  We buy the lean center cut pork loin and cut it into rib shapes making lean boneless pork ribs.  Safeway and Costco sell them already cut.

Grill them up for about 8-10 minutes per side, topping with BBQ sauce and flipping 3 times during the last 5 minutes.  1 oz = 1 points+ if you are counting.  These ribs are Simply Filling, just count the WPA for the BBQ sauce (1 WPA)

I pondered having Sweet Potato Fries, but, decided on making up a big batch of Harvest Grain Salad so we could have it for lunches (planned leftovers!)

I used artichokes packed in water and Trader Joe’s Sun Dried Tomatoes (air dried, not in oil) to make this recipe Simply Filling.

All together with super sweet farmer’s market corn ~ 100% Simply Filling & Delicious!

    Made the “Better than Big Mac Burger” tonight for dinner. OMG, my husband was so happy, he was sure we were cheating. We used Flat-Out Fold-It’s for the bun, it was awesome. Thanks for all the great recipes & posts, I look forward to every one of them.

    I started the Simply filling plan today. So weird cuz I’ve always counted points, but I’m thinking I’ll really like it. Think it will be easier to do on vacation. How has your weight loss been with this plan?? Nina

      HI Nina,

      Thanks for asking. I have only had one weigh in so far and I lost 4 lbs. I am sure my weight will level off this week or the next, but, it’s nice to be excited about the plan again. Sometimes change is good.

      Sherrie, I just thought that I would let you know that Biscoff Spread is similar to peanut butter in texture but tastes like a cookie! It is so delicious. Danica brough it to one of our Weight Watchers Sunday morning meetings with bagel things and I fell in love instantly. I buy it at Cost Plus/ World Market.

    Danica, You are doing so good on simply filling. I’m so inspired to get on the bandwagon. I don’t belong to WW but may look into it. I love all of your food suggestions though.. and recipes! Keep up the good work!

    Do you eat the Harvest Grain Salad hot or cold? And, if I make my own Harvest Grain Blend for Simply Filling do I need to use whole wheat orzo & couscous?

    I can’t wait to try this!

      Hi Carolynn,

      You know, I’ve eaten the Harvest Grain Salad hot and cold. I prefer it chilled and CORE. You do not need to use the orzo or couscous if you make your own, but, I sort of feel like they are the major components that make the salad. If you do make it and omit them, I’d be curious how it turns out.

    Are you certain the Harvest Grain Salad is Simply Filling? I thought it had to be whole wheat pastas and grains, the couscous in the Trader Joes blend is regular, I think…not whole wheat. Can you clarify?

      Hi Lauren,

      Great catch! You know when I did CORE all couscous was included and I did not see for Simply Filling they switched it to only Whole Wheat. The Trader Joe’s version says it is made with wheat flour and does not specify whole wheat. I think you may be right in that it is regular since it doesn’t say whole? In that case, it would be better to make your own mix using whole wheat couscous.
