Are you a leftover queen and/or king?

Happy Monday all! I think the reason I was hungry ALL DAY long was reading all of your favorite meals.  I actually think you gave me some new ideas of things I “must try” to see if I can add them to my list. 

I had breakfast with the Pumpkin family this morning ~ The Husband added two new mini pumpkins he found & called them “Teeny” & “Tiny” ~ he is such a clown.

TIP ~ Last night I boiled up the extra eggs I had to have as quick snacks and for breakfast in the morning.  I LOVE doing this whenever I need to use up the rest of a carton of eggs because I bought a new carton. (2 points+)

I ended up having my 0% Raspberry Chobani as my mid morning snack. (3 points+)

I honestly could not wait to dig into lunch today ~ I am totally that person that LOVES leftovers.

Healthy Nachos!!! The same as last night sans the avocado (9 points+)

I was totally bummed I forgot my hot sauce LOL.  That’s ok though because I had jalapenos to make up for it.

Double Crunch ~ Spicy Peanut Asian Slaw with 1 Tbsp dried cranberries & toasted almonds (2 points+)

Topped with my favorite Trader Joe’s Low-Fat Spicy Peanut Vinaigrette in my perfect 2 Tbsp “container”.

It makes me laugh every time I take a picture at my desk with the guest chair on the opposite side….it makes me look like I am serving up lunch to my imaginary friend or something.

Commuting snacks ~ 1 points+ light string cheese & a nectarine.

I made up my fancy menu yesterday and was ready to start cooking up a storm tonight when The Husband said he “found” frozen pizzas in the freezer that he wanted to cook for dinner with salad.

I totally took the easy way out and said ~ Great idea, let’s do that Open-mouthed smile

Remember those Trader Joe’s Tomato Basil Puff Pastry Pizza’s I fell in love with awhile back?  I guess I stocked up because we had TWO in the freezer.

10 points+ for the entire thing and definitely worth it if you are in the mood for something rich, flakey, buttery and cheesy.

While I “cooked” the pizzas, he made us simple side salads topped with Fat Free Italian (1 points+)

In other SO FREAKIN’ COOL NEWS ~ They have a Weight Watchers At Work Program at my new office!!! The first meeting is tomorrow ~ I am so nervous and excited.  I will still visit my favorite leader, but, this is another great option.

Details coming up tomorrow! For now ~ ZZZZZZZZZZZZZZZZZZZZZZZZ!

Are you a leftover queen and/or king?

I LOVE leftovers for TWO reasons ~ it either gives me lunch the next day or it means I do not really have to cook the next take.  I am totally a leftover queen because I will PURPOSELY make extra (grill 6 chicken breasts versus 2) just so I can use them in another way the next day.

    I am definitely a leftover Queen! My husband and I both love them…because I have another night’s dinner already prepared, and the flavors are always better 🙂 Cold pizza with a cuppa for breaky is just wonderful…of course since WW I don’t do that one all too often…

    I love leftovers! They make our busy family life easier around dinner time (or lunch time) the next day. 🙂

    I always have left overs. I tend to make dishes that I don’t mind having the next day, that taste okay after being in the microwave (I HATE microwaved chicken, I don’t know what it is but it tastes horrible!) I especially like making casseroles because they serve up perfect portions and are great to bring with me to work!

    I am a serious leftover queen! I cook up a storm on weekends so I don’t have to cook during the week. For example, this Sunday I cooked a corned beef brisket with potatoes in my dutch oven for dinner and at the same time cooked a pork loin with mushrooms in my roaster. So now we have leftover corned beef and an entire pork loin for this week. I just added some microwave steamed veggies and dinner is done!

    I’m now making soup every Sunday for Monday night’s dinner and then maybe for lunch anther day. If I make enough, I freeze half for a different week.

    Completely into leftovers! Many soups and casseroles taste better the next day or two and having meals in the freezer can fill in as healthy options for meals when feeling too tired to cook. I am also very lucky that my husband eats whatever I put in front of him always….no complaints!

    Where did you get that cute little container you have your salad dressing in? I tend to make my own chili . I add ingredients they don’t dare try!

    Queen of leftovers, but my 15.5 yr old daughter hates leftovers (BOOOO!!!).

    I tell her that leftovers are a blessing, that we have plenty of food to eat.
    She just rolls her eyes. Oh well, she’ll learn when she’s living on her own.

    LOL!!!

    I’m a queen of leftovers. Love having them for lunch the next day. On a side note, where do I find that TJ Spicy Peanut Dressing? I searched for it last time at TJ’s and couldn’t find it (and our store isn’t that big!)

      Hi Wendy,

      You can find the Trader Joe’s Spicy Peanut Dressing in the fridge section near the produce at Trader Joe’s. If you cannot find it there, then, you can look for Lite House ~ they make a Peanut Version that is about the same and is only 1 points for 2 Tbsp. You can find that brand at most grocery stores in the fridge section next to the produce as well.

    I forgot to mention……the At Work meeting is wonderful, if there is one there take advantage of it as you can also attend center mtgs too when you can’t attend your at work mtg. They are convenient, can motivate during the work week and you have lots of support at the office helping each other work the program!

    I will miss you though……..

    At some of the big law firms I worked at they had WW at Work – loved it, but what drove me crazy is that a couple friends of mine would drink no water or eat anything the day of WI, and our meeting wasn’t until 3:00 in the afternoon!

    Please crown the leftover queen tiara on me please, I am the queen of leftovers because. . . my husband won’t. Eat a leftover. Ever. Except if its meatloaf or fried chicken.

    I do eat leftovers but only for an extra meal. If it is soup, I will make it and freeze it for lunches, my husband not a fan of leftovers. WW at work are a great program, I used to attend ours, but then the interest dropped and they discontinued it, the interest dropped because the leader was not that great.
    On a side note I made the pumpkin bars and they rock!!!! I tried a small taste, husband eat three, taking the rest of them to work and to my trainer.

    Where in the world did you get that 2 tbls dressing container?…Is that a mini jelly jar for a single serving?. It looks like what you would get from Cracker Barrrel. I need me one of those.

      Hi Juanita,

      It is actually a Artisan Nut Butter sample jar I received a few years back. You might check Crate & Barrel to see if they have something like that. If not, Tupperware sells “Smidgets” that work just as good and are leak proof.
