Happy Monday all! This morning I was up bright and early to get my workout on. Getting up was the easy part, the workout was the hard part. I kept telling myself think of how good you will feel to have completed your workout….don’t stop now you’ve come too far.
It worked and I started my day feeling proud.
Breakfast totally hit the spot. 1 scrambled egg with 1 roasted garlic mozzarella chicken sausage (4 sp) and strawberries.I did fuel up for a super busy day back in the office with a grande iced nonfat latte on my drive in (3 sp).
We had a sushi welcome lunch at Mikunis for our newest hire today.
Zero point edamame!Miso soup (1 sp)1 piece of grilled chicken with Sriracha (0 sp)A couple of pieces of this white fish sashimi (0 sp).Then, it was sushi time! All of these rolls were shared and I am counting 12 Smartpoints for my share that I didn’t count out. I loved them all.

sauce, masagoMy afternoon flew by and all I wanted for dinner was something fast and healthy.
Enter this simple teriyaki chicken stirfry.
1 Tbsp avocado oil heated over medium high heat. Add chicken with a little salt & pepper, cooking 2-3 minutes.Add onion and cook until lightly browned, about 4-5 minutes.Add snap peas then teriyaki sauce cooking 2 minutes longer.Served over 1/3 cup steamed rice and topped with toasted sesame seeds for 3 sp.Dessert is a few handfuls of these cherries we picked yesterday.
