Happy 2013 Everyone! Thanks for sharing all your goals for the New Year on yesterday’s post. I know that 2013 is going to be a fantastic year that we all achieve everything we set out to do.
This morning a group of us from my Sunday meeting set out to cheer our leader on for her new meeting that started on New Year’s Day. I snacked on orange slices, a banana and drank probably way too much coffee, but, it was fun to get together with everyone and start the year off with a little extra motivation.
I was starving when I walked on the door and grabbed 2 oz. of that Merlot BellaVitano Cheese while I prepared lunch to check off my dairy requirements (SF + 4 WPA) – 4 points+
The Husband started catching a cold last night so I cooked up a batch of Chicken Noodle Soup for him as soon as I walked in the door. I am not sure what I did differently this time, but, this didn’t really hit the spot. (SF) – 5 points+
It could’ve just been that we had these fantastic Tostitos Hint of Lime Tortilla chips leftover from our New Year’s Eve celebration.
As if I need another reason to be addicted to chips, these little tangy flecks of lime make these tortilla chips completely irresistible. (SF + 4 WPA) – 4 points+
I have pretty much decided that these Blue Diamond Habanero BBQ Almonds are the almonds I love the most this year. Last year, it was the Salt & Vinegar, but, these…..it’s like having these lick your finger good, crunchy, BBQ Chips for only 2 points+ for a 1/2 ounce. (SF + 2 WPA)
As we were pondering what to eat for dinner, The Husband saw a picture of Southwestern Potato Skins in the Clean Eating Magazine I was reading. It instantly made me think of the Sweet Potato BLTA Nachos we had awhile back.
He chose Yukon Potatoes for his “chips”.
Topped with cheese, bacon, green onions and all the fixin’s.
Served up with simple, crisp romaine salads topped with Balsamic. SF – 0 points+.
Since we were out of Sweet Potatoes, I had 3 options ~ Yukon potatoes, Sweet Potato Puffs or Butternut Squash.
I picked the Butternut Squash because I know I love Butternut Squash Fries.
You get these golden little “chips” when you slice the butternut stem thin, toss with a little sea salt, black pepper and olive oil, then, roast the chips at 450 for 15 minutes, flipping half way through.
Topped with 1 oz. reduced fat sharp cheddar and 2 slices of the real deal bacon…..
Splashed with the Hot Pepper Sauce we bought in Jamaica…..
And topped with all the fixin’s ~ jalapenos, green onions, cherry tomatoes and a little drizzle of 0% Greek Yogurt.
AAAAMAZINGLY good…not as delicious as sweet potatoes (that’s tough competition), but, still sweet, spicy, cheesy, bacon-y good! (SF + 4 WPA) – 6 points+
I think I might just join in with The Husband and have dessert tonight ~ I am thinking one of his Trader Joe’s Caribbean Popsicles….they are so fruity and refreshing for only 2 points+.

- AL ~ 0 AP, 56% ~ AL actually asked me today how that whole Challenge Goal thing is working for me and if I wanted to fine-tune my strategy to actually meet my target each day ~ ha! Today was my last lazy day….tomorrow, I say hello to the treadmill again ~ I will show AL how wrong he is!

Oh I know what you mean about AL and asking me what I wanted to do to get closer to my goal! I have been sick and the weather has been lousy so it has been almost 4 weeks since I reached 100% consistently! I had hoped to get on track today, but rainy and cold again. I have been moving furniture and going thru unpacked boxes, but that just does not earn the APs like walking does! Good luck tomorrow with the treadmill!

OMG – when I was pregnant with my son (now four) I ate those tostitos by the BAG. And a store near me – Big Y, has a similar chip – margarita flavor. Holy pig outs, batman! No wonder I’m still working on losing the weight. Go you for being able to portion out servings! Atta girl! 😉
