Happy Monday all! Today’s post is for all the baseball fans out there. I was running around this morning like a made woman trying to get everything done and get out the door. While I put the Pork in the crockpot for our Slow Cooker Pork Carnitas and made lunches, The Husband was in charge of breakfast.
He made us “Baseball Rolls”! He said he wanted to make an Easter Egg, but, that took too much work so we ended up with Baseball Rolls LOL.
AKA Healthy Egg Rolls ~ crispy tortilla’s topped with cheesy goodness, a fried egg and Sriracha, of course. (SF + 1 WPA) – 5 points+
I am completely addicted at the moment to Grande Iced Nonfat Latte’s with caramel drizzled on the top. This turned into my mid morning snack (SF) – 3 points+
I am super excited to report that today for lunch I made it to the gym! I didn’t brave spinning yet because honestly I wanted my “steps” to show up and I am pretty sure I’d be sucking wind trying to keep up with everyone.
But, the important part is, I went, I conquered the treadmill for 36 minutes and I finished my book on tape (actually, it’s on my iPod, but, it’s what I still call it).
I am also craving salads again ~ finally! For the longest time a big bowl of greens didn’t appeal.
In the mix (SF + 1 WPA) – 4 points+:
- Organic mixed greens with carrots and cabbage
- 1 mini organic cucumber
- 2 mini organic sweet peppers
- 1 oz. each 98% FF turkey and am
- 1 slice Jarlsberg lite swiss (I LOVE this cheese)
- 1 Tbsp. Newman’s Lite Lime Dressing
Served up with two Low-Fat Banana Bread Cookies for dessert (SF + 2 WPA) – 4 points+
Each week I always bring a bunch of different fruits to keep at my desk for quick snacks.
I do not eat them all in one day, but, it gives me a few healthy choices I can grab and helps me avoid all the temptations in the office (like the licorice jar!)
Today, I snacked on my banana with a Lite String Cheese. (SF) – 1 points+
The house smelled amazing when I walked in the door thanks to the Slow Cooker Pork Carnitas that I put in the slow cooker this morning.
All I had to do was prep the toppings and cook up the “Taco-Dillas” – Grilled Corn Tortillas with the cheese melted on top.
I made up 3 Pork Carnita Tacos topped with cheese!, Carnitas, lettuce…..Yep, I got a little crazy with the lettuce….
And a few Sweet Peppers for good measure (The husband’s addition).
Be prepared to have these tacos drip all over your hands as eat you them. I had 3 tacos for (SF + 3 WPA) – 12 points+
STATS:
- Simple Filling (SF): 7 WPA (Weekly Points Allowance) used, 31 WPA remaining
- 29 Daily Points+ 0 WPA used, 49 WPA remaining
- I did it ~ Check 10,000+ steps today ~ woot, woot!

How many of you remember and/or made the old Weight Watchers Chicken Baseballs Recipe? Yes, it’s a real recipe. I never made it because it seemed weird but heard it’s good.

Gosh, I do not remember that recipe! Must have been one of the years when I was trying another plan, which of course never worked 🙂 I have to tell you I made my 10,000 steps yesterday 🙂 I’ve been having your same breakfast but not as creative as your Hub! Gonna have to try that pork, look yummy!!

How do you eat those healthy egg rolls? Out of hand, flat, like a tostada? Rolled, like the name suggests? Knife and fork, like an elegant lady? Mine tend to break when I roll them, but they’re a bit hard to cut. (Love ’em though!)

Hi! I am going to give this salad a try to lunch. I am always intimidated by salads. Seems to be so many ingredients to pack! lol I may have to try this tomorrow. All stuff I have on hand too. Do you have any advice for reaching your 10k steps? I am a 911 dispatcher and i work long 12 hour shifts while sitting in a chair! Any suggestions?
