Happy Sunday all! I have had such a productive and fun weekend. The Husband was off to work on Saturday morning and I totally took advantage of the down time. I didn’t realize how much I missed spending half a day in the kitchen cooking until yesterday. I started off originally just making Brown Sugar Banana Nut Mini Muffins and then, it just kept going…..cookies, crackers, beans, lunches, dinner LOL. It’s a good thing we had events planned all weekend so I could drop it all off!
I brought the mini muffins to my meeting and the 1 points+ Parmesan Almond Crisps.
Coffee, 1 crisp, 3 brown sugar banana nut mini muffins, strawberries (6 points+)
My Leader ended up putting her spin on my Jicama Hash browns after deciding have Jicama straight up was too much. I totally cannot wait to try her version with potatoes too!
On our way back from the meeting, I told The Husband we should have sushi today. HIs reply since he isn’t a fan at all…..only if we can trade in dinner and have big grilled steaks tonight.
Ummmm, OK ~ I can totally do that!
I made sure I hopped on the Treadmill when we got home and started day 1 of Couch to 5K (c25K). One of my friends is starting the series and I jumped in to do it with her ~ M-O-T-I-V-A-T-I-O-N!
After doing a few things around the house, we were off to Yokoso Sushi.
Miso Soup (2 points+)
Japanese Miso Salad with the BEST Miso Dressing that I NEED to re-create (3 points+)
I could eat this a couple of times a week and NEVER get tired of it. It might be a good thing this place isn’t closer.
TUNA STEAK ~ Spicy Crab Meat Topped with Ahi, Avocado, Green Onions, Tobiko SRIRACHA and special sauce made extra spicy for me = LOVE!!
I estimated this based off a Spicy Tuna Roll at 1 points+ a piece. (8 points+)
Mid afternoon I snacked on 2 Meyer Lemon Cookies that I made up just so I could share them with some of our friends yesterday and today. (2 points+)
2 oz Tri Tip ~ Grilled to perfection by The Husband (2 points+)
Slow Cooker Chipotle Beer Baked Beans that I cooked up just so I can them at lunch. I think I am going to make Baked Bean Nachos or Sweet Potato Baked Bean Nachos with them. I had a 1/4 cup for 2 points+.

YUM as always! I made the buffalo chicken in the crockpot from skinny taste today can I say OMG so good everyone loved it here you gotta try it! Ok this week is as follows…turkey tacos…5 spice chicken with rice and veg….grilled chops and cous cous ,chicken gyros ( from the new WW cookbook)…pasta and turkey meatballs..

Omg good luck on couch to 5k!! I JUST downloaded it yesterday and will start it TODAY after work! Not to mention I’m gonna do it outside and I have a TON of hills around my place…yikes!!! I’ll be rooting for you!!!!!

It is the Couch to 5K program that allows you to go from not running at all to working your way up to running a 5K (3.1 miles) in 9 weeks. It’s fun and if you are looking for a challenge, try it.
