Happy Friday Eve all! Thanks for all the great ideas on how to use all the great produce in this week’s Farm Box. I definitely put a few of them to use today and I cannot wait to share the recipes.
After checking off my 30 minutes of jogging (success!), I asked The Husband if he wanted anything for breakfast. He said no, but, as soon as he saw I was making Healthy Egg Rolls, he changed his mind lol.
These spicy, tortilla, egg & cheese rolls are addicting and the best part is they only take a few minutes to make. (SF + 1 WPA) – 4 points+
Mid morning I snacked on the last of our grapes with an apple and Sargento RF Sharp Cheddar Cheese Stick (SF) – 2 points+. The Husband and I totally ate 1 lb of grapes in a day
I could’ve totally taken the easy way out and dropped my mail in the pick up box, but, instead, I decided to move more and walked to the post office missing the rain showers.
Ok….confession ~ I really wanted a Starbuck’s so it was worth walking for it!
Tall Nonfat, Decaf Latte with Caramel Drizzle on Top (SF) – 3 points+
Lunch started with a big bowl of the Smoky Ham & Bean Soup that I made yesterday. Only today, I made sure I put it on top of the collard greens I cooked up last night. I actually think this soup is even better today as all the flavors had time to blend together. (SF) – 4 points+
I also had 1/4 cup of Nature’s Box Anti-Oxidant Boost for dessert. Salty, crunchy, sweet, tangy and chewy ~ good! (SF+4 WPA) – 4 points+
I totally have Suzi of Spunki Suzi to thank for tonight’s dinner idea. She said she thought of potato leek soup when she saw the gigantic leeks we received from Farm Fresh To You.
Instead of using regular potatoes, I decided to use Sweet Potatoes and bacon for tonight’s soup.
What’s not to love about apple wood smoked bacon, brown sugared sweet potatoes, caramelized leeks and savory fresh herbs all in a big bowl of Sweet Potato Leek Soup?!
Oh yeah….it really is as good as it sounds! 100% SF or 4 points+ and the recipe is coming up soon.
While the Sweet Potato Leek Soup cooked, I decided to make a side of Brussels Sprout Crisps….like Kale Chips, only better!
I wish I had thought of this idea on my own because it’s pretty amazing. As soon as I saw this recipe in the November Every Day Food Magazine, I knew I had to make them.
I “healthified” Martha’s recipe by omitting the oil and cheese and using nonstick cooking spray. Some of the leaves get really crispy and others stay softer, but, the flavor when paired with the roasted walnuts is fantastic. The leaves literally melt in your mouth followed up with a nutty crunch.
(SF + 2 WPA for the nuts) – 2 points+ (x’s 2 ~ I totally went back for the rest!)
STATS (12 am – 8pm)
- 2,872 calories burned
- 13,562 steps taken
- 7 WPA used, 16 WPA remaining (25 daily points+)
- AL – 151%, 11 Activity Points (this might be my all time high!)

The last picture you posted totally looks like a magazine shot. Love it. I’m going to give the brussel sprout “chips” a try since I totally love these little sprouts. And soup! Hearty, lucious, filling, warm… definitely November fare.

Omgoodness I tried the healthy egg roll for breakfast this week. So yummy! I wake up and nothing else will do. The mission extra thin corn tortillas are so flavorful just like you said. Thx for sharing your world with us!
