Build a Chipotle Chicken Burrito Bowl Salad!

Happy BIGGEST LOSER DAY everyone!  Today was an AWESOME food day ~ from my pumpkin walnut muffin and dirty latte to chowing down at Whole Foods with my friend to re-creating a BIG Chipotle Burrito Bowls at home.  Some days are totally worth repeating and I think today is one of them! 

I might have got a little crazy with my eating, but, I tracked every single delicious bite and am not afraid to use my Weekly Points Allowance! Open-mouthed smile

My day started with a Pumpkin Walnut Muffin from the freezer (6 points+)

Big bowl of MELONS!  The melons were actually pretty good, but, totally make me LONG for summer and FAMRER’s MARKET SEASON!

Topped off with a Venti Iced Dirty Latte (4 points+)

Continental Breakfast

Lunch today was AWESOME!!! Since I had a gift card from one of my FAVORITE people in the world, Janetha, we went to Whole Foods and built HUGE salads!

I am pretty sure I left NO VEGETABLE behind because it ended up in my bowl! 

* Romaine & Mixed Greens

* Cherry Tomatoes

* 1 Tbsp each ~ Kidney Beans & ChickPeas

* Summer squash & Zucchini

* Broccoli

* Roasted Yellow Beets!

* Cioppino Onions (my favorite to use instead of dressing!)

* 2 homemade Croutons & 1 homemade tortilla chip (2 points+)

I actually only managed eating half of my salad.because I couldn’t pass up their hot bar too!

I had a small scoop of Chow Mein & Fried Rice (3 points+)

Plus Teriyaki Chicken for protein with broccoli & green beans (3 Points+) ~ It tasted way better than it looks.

Since Sift Cupcakery & Dessert Bar is now in the same shopping center as Whole Foods and Trader Joes (yup, TJ, it’s true!), we picked up a Snickerdoodle Whoopie Pie to share. 

I am pretty sure we were making all kinds of inappropriate noises in the break room as we ate it….SO AMAZING and worth every estimated point+ (10)  This is what WPA are made for!

As you all know, I sort of have a thing for Chipotle!  I honestly could eat there every day and be content with my Chicken Salad Burrito Bowl or Crunchy Chicken Tacos.

I have been wanting to have a BUILD A CHIPOTLE BURRITO BOWL “party” at home ever since I saw the recipes on Chipotle Fan.

The main ingredient in their chicken and steak marinade is Dried Ancho Chilies that get reconstituted in water by soaking them overnight in water.

Remove the seeds and stems, then, add everything to the food processor.  I left out the Chipotles in Adobo because honestly I thought these peppers would make the sauce hot enough.  Next time, I’d add the adobo sauce for the smoky flavor.

Process until smooth to make this delicious smelling red marinade. I knew right away that it wasn’t the same as Chipotle’s because it’s red, but, it is tasty nonetheless.

I marinated steak and chicken overnight to maximize the flavor then grilled them up tonight.  We both LOVED the marinades on the chicken and the steak.

The Husband made his into BIG HUGE BURRITOS and I made up a BIG Chipotle Burrito Bowl Salad!

I started with an organic romaine/mixed green blend and cherry tomatoes.

Layered on my version of the Cilantro Lime Rice that I think is spot on!  Here is a link to the original version on Chipotle Fan, but, I just found it was missing something.

CILANTRO LIME RICE

INGREDIENTS

2 cups Organic Jasmine Rice

4 cups water

1 1/2 limes, juiced

2 Tbsp butter

1 Tbsp canola oil

1/2 cup chopped fresh cilantro

Sea salt and Black Pepper to Taste

INSTRUCTIONS

1.  Cook rice with water on the stove according to the package or cheat like me and use your rice cooker.

2.  Stir in lime juice through oil until combined.  Fold in cilantro and season to taste with sea salt and black pepper.

Makes eight, 1/2 cup servings, 5 points+ each

Nutritional information per serving based on 8 servings

Add in the next layer….2 ounces of spicy grilled chicken (2 points+)

Corn Salsa!  The Chipotle Fan Recipe is EXACTLY like what they serve at Chipotle ~ I used Trader Joe’s Fire Roasted & Regualr Corn ~ LOVE!!!! (0 Points+)

1/2 ounce sprinkle of pepperjack cheese…..(1 point+)

1/4 C GUACAMOLE!!!! Tasty but I think it needs garlic and I added hot sauce too (2 points+)

My entire Burrito Bowl was 10 points+ and totally reminded me of the real deal even if it wasn’t exactly like what they serve.  I can’t wait for CRUNCHY TACOS tomorrow night!

Are you a Chipotle Fan??? If so, what do you order whenever you go.

I LOVE Chipotle and it probably doesn’t help it’s only 5 minutes from our house!  I ALWAYS get a HUGE Chicken Salad Burrito Bowl (like this), occasionally I get crunchy chicken tacos and I LOVE their simple cheese quesadillas too!

    I was looking at your (awesome) whole foods salad and thought, too colorful and pretty to be a chipoodle salad! 🙂

    the next one looks JUST like one… I LOVE me some chipoodle – I always ask for the plain rice because I don’t like cilantro… they bring it from the back and they call it “China”.

    I love Chipotle! I normally get a chicken burrito bowl but I nix the rice and beans and go for the veggies instead. I also don’t like the cheese. I find it doesn’t taste quite right to me!

    I call it Chipoodle too. 🙂 I either get the carnitas bowl or the veggie bowl with tonnnnns of guac and ridiculous amounts of the corn salsa… can’t get enough of that stuff!!

    I get the burrito bowl or salad with barbacoa if I do the salad I tell them keep the dressing. Always get the black beans! YUMMM!! 🙂

    Wow girl, you went all out on the Chipotle bowl! I love making my own Chip bowls at home too. Also, I get to use tofu for the chicken which I love.

    Whole Foods = amazing lunch!

    Everything looks delicious, Danica! It was hard to scroll down from the snickerdoodle whoopie pie…I kinda got stuck drooling over that 😉

    I love Chipotle. I’ve only been once but we got an assortment of the burritos. My favorite, by far, is the Barbacoa burrito. Love the fresh made guac too. However, next visit I’ll be getting a burrito bowl, probably the chicken one. Black beans instead of refried beans. Yum. I’ve also made the Cilantro Lime Rice here at home and it turned out really good.

    Mmm, I’m a Chipotle fan, too! I usually order some sort of salad (+ guacamole on the side). I’ve tried it with every kind of meat they have, and I can’t tell which is my favorite!

    I love Chipotle! I’m not ashamed to say when I was in college (and lived 2 hours away from a Chipotle) my roommate and I took a road trip to visit our beloved Chipotle one day. Soooo good!!

    I was over that was on Monday but I only went to TJ’s and came home. BUT, it was only 13 miles so I am waiting for a lunch date from someone. (hint hint) 🙂

    We LOVE Chipotle! I get a bowl, rice, chicken, corn & tomato salsa, w/guac and I give 1/2 of the scoop of guac to Sean (15) I love every bite of it! YUM! Bravo to you for trying to make it at home. I’d be afraid to master it and then know that I’d never get to go to eat there again. lol

    I have got to get back over to FfWL! I’ve been neglecting it. Just been busy irl and surfing the Zumba page since I got certified. We don’t have a Chipotle here but it sounds yummy! The south lacks in so many good things, but what we lack in some areas, we more than make up for in others! 🙂

    How funny, I had the same Chipotle bol knock-off for dinner last night! Inspired by the fact that Dan brought leftovers from home there. I threw it together really quickly, didn’t cook much of anything (or I would have had ckn in mine).

    Mine was more P+ than yours, but I had different ingredients and more rice I think. (cup brown rice, refried beans, salsa, fajita veggies grilled in oil, boca crumbles, guacamole, ranch dip made with greek yogurt, 2 baked tostada shells). I was short on oil and dairy for the day, so I made it up in dinner!

    just wanted to tell you you need to ask for a raise, because while shopping yesterday, i spotted Annies Lite Gingerly. Now mind you, I would have never noticed it if it weren’t for you. I calculated out the points…and 2 TBS for 1pp! woo hoo! and can I just say, it tastes wonderful. had it on my rainbow salad mix with some oranges…divine! Thanks! 🙂

    I do like Chipotle and I usually get the salad with chicken, med salsa and corn salsa, no cheese or sour cream. I love the flavor of their chicken.
