Happy Saturday all! Can I just say I really LOVE seeing all of you Take Your Pledges for Health. It is SO MOTIVATING to see the goals you set and I LOVE reading them all.
I think my favorite so far might be from Michelle who is going to run a Half Marathon on behalf of Danica’s Daily….but, I might be a bit biased on that one 😀

I pondered being lazy today and doing nothing, but, once I started my todo list, I couldn’t stop. I feel SO accomplished! I checked off everything on my todo list…ready to see it all?
* Cleaned house
* Did a million loads of laundry (really that many!) 😀
* Went to the FARMER’s MARKET!
* Mom’s day shopping
* Lunch with The Husband
* Planned meals for the week
* Grocery shopping
* Watched all my favorite shows on Food Network (mini break) 😀
* Prepared appetizers and dinner for tomorrow’s Mom’s day celebration
* Cooked some more for us
* Baked the BEST healthy Meyer Lemon Sugar Cookies
I think that’s it…ACCOMPLISHED!!!! Now, I can feel good about celebrating our Mom’s tomorrow and relaxing.
This morning I started off with exactly what I was craving ~ Nut Barn Almond Butter on 2 pieces TJ’s FF Multi-Grain Bread (4 pts) ~ I did sample a few pieces of fruit at the market too.
This combination surprisingly kept me full all morning long until we stopped for lunch.
I had planned on making us an awesome grilled chicken salad for lunch but The Husband requested The Joy of Eating.

Delicious ~ I think the secret to their AMAZING sandwiches is their homemade sweet bread.
Mid afternoon I took a Starbuck’s break and had a grande FF Decaf Iced Latte with Caramel Drizzle (2 pts).
I made The Husband Pot Roast, Mashed Potatoes and Greens for dinner, but, I am not a fan of Pot Roast. I really did ponder having the potatoes only 😀
I ended up having some of the greens with a little Frozen Veggie Edamame Chow Mein. A little random but it definitely hit the spot.
This was the first time I’ve ever made Greens straight up, I usually just buy the BIG BAG at Trader Joe’s that is a blend of Collard Greens, Mustard Greens, etc. I have to say, they are delicious, but, very GREENIE this way…The Husband said it tasted like ass grass
After dinner, I did a little experimenting. I still have a few of the Meyer Lemons from my Grandma’s house that I wanted to use to make Lemon Bars and Meyer Lemon Sugar Cookies.
Tonight was my first experiment with Meyer Lemon Sugar Cookies. I think they turned out pretty amazing and I LOVE how you can see the lemon zest. They are crispy on the outside and chewy on the inside.
I might try another round with less sugar to see if I can make them even healthier 😀
Recipe coming soon once I find the PERFECT Lemon Cookie…these are close though for sure 🙂
Time for COUPLES RETREAT ~ I’ve heard so many great things about the movie!

Sounds like a complete day! I always feel so much better when I actually do something! I got my Wisemen tea delivery yesterday and am already loving it! I can’t wait to buy more tea!

did you like the movie?! marshall and i redboxed it the other day. it was cute. those lemon cookies look awesome! and the avocado.. all lined up perfectly.. ready to be devoured 😉 yum. great job on a productive weekend!
p.s. looking more into the cooler 1 plan. i think i want to gear up and do it.
