Catch up & Weekly Menu

Hi all! How are you doing? I know I left you all hanging last week but I am back today with one big photographic catch up. The highlight of my week was attending a Food and Agricultural Conference that ended with a dinner on the Napa Valley Wine Train. I know it sounds crazy that I’ve never been on the train living so close and working in the wine business. But, I never have and I was so excited to check it out.Once we boarded the train, we were able  to pick any table we wanted to sit at.We were promptly greeted with this delicious Domaine Chandon while we browsed the menu, the wine list and our route.Fun facts….I ended up picking the Robert Mondavi Cabernet that was paired with the steak entree because I love cab.We started with warm sour dough and butter. I could’ve totally just eaten this with my wine lol.This mixed greens salad was so simple but very good. Sweet, salty, crunchy and every flavor worked together.

Nope, I didn’t eat the stinky cheese 🙂My entree was the BBQ Peach Pork loin with rainbow chard and a polenta cake. I loved this!After dinner, we headed back to the last 2 train carts for cocktails and dessert. You even have the chance to stand at the very end of the train on a patio to take pictures or enjoy the sunset. I had the caramel Panna Cotta that came topped with chocolate and cherries. It was so creamy and tasted just like homemade caramels.During dessert, we got to watch the locomotive detach from the front of the train and get hooked up on the back to drive us back. That was cool to watch standing right on the patio.I had Friday off where I did a deep cleaning and all my weekend chores so we could have fun on the weekend.

Saturday I weighed in gaining .6lb which I totally didn’t agree with. Instead I am choosing to focus on my successes like getting in 4 workouts, hitting my 10K step goal 5 out of 7 days and tracking every bite. I was saving points all week and used them on Thursday to enjoy. This is my motivation to stay the course this week!

Today we were up early to head to the Folsom Antique Fair. The Husband didn’t want breakfast and I thought I’d have a banana and latte…only they were out of bananas.

My compromise was the oatmeal with a little dried fruit (5 sp) and a tall Nonfat 1 pump chai tea latte with cinnamon (4 sp).On our way back into town we had Jack’s Urban Eats for lunch.

My build your own salad included mixed greens, corn, chickpeas/kidney beans, olives, mushrooms, beets, sweet potatoes, chicken breast and balsamic vinaigrette on the side (5 sp).Dinner was simple – BLTAs and watermelon. I made mine open faced with one slice Nature’s Own Butter Bread topped with 1/4 mashed avocado, tomato, greens and 2 pieces Trader Joe’s 1 Point Bacon. I actually ate an extra piece of bacon bring my total to 8 Smartpoints.I had 2 pieces of salt water taffy for dessert.
