Happy Sunday all! Thank you all for the emails, Facebook messages, tweets, etc. and for checking in on me the past few weeks. Even though I haven’t had a chance to respond to everyone yet, I want you all to know I’ve read every message I’ve received and smiled. It’s really nice knowing you all look out for me when I am not around as much.
I know I’ve said this before, but, this time I plan on making it stick ~ I think life is finally going to settle down and I can get back into my usual routine. I miss it and I miss you all! I will be back this week with the Canning Recipes I promised and look forward to sharing my daily trackers, recipes and more. Now, I just need to stand firm on my boundaries and make it happen!
With all that being said, here are a couple of my favorite pictures of the past few weeks:
We spent Labor Day Camping with my Sis and her family. My 6 year old nephew is totally attached to The Husband and would follow him everywhere.
The Husband taught him how to play the “Matching Game” (Quick Hit Slots!) on what the nephew called a big “Kindle” aka my iPad.
The Husband said the tent wasn’t comfortable so he made a makeshift bed in his truck out….my nephew followed him and they both passed out asleep (yep, we couldn’t resist taking pictures!)
Our garden is is in full swing now and I finally braved picking two of our Ice Sugar Baby melons.
I am totally not a watermelon farmer, but, I am proud of our little melons
They are surprisingly sweet but I am not a fan of the seeds ~ our vine has 2 more left but they are tiny.
Next year I want to grow grape cherry tomatoes, but, our Sweet 100 Cherry Tomatoes have given us hundreds of super sweet cherry tomatoes.
My pepper addiction continues! I am totally obsessed with ordering these peppers at any restaurant that has them and buy a bunch at the Farmer’s Market every week.
What I’ve learned
- Padron Peppers are like pepper roulette ~ most are sweet, but, every 1 in 10 are hot…as in hotter than jalapenos and will make your lips burn!
- Shishito Peppers are sweet and not spicy at all ~ very much like the Friggitello Peppers I first fell in love with.
My favorite way to make them ~ toss them in olive oil and put them in the grill basket. Shake and grill for about 3-5 minutes until softened, lightly charred, but, not burnt. Top with sea salt, lemon or lime juice (freshly squeezed!) and a pinch of sweet red pepper flakes.
Tomorrow I am restarting the Couch to 5K to get my bootie groovin’ again. I do better when I have a goal to work towards and a list to check off. For this week, I am shooting for 3 workouts and maximizing my step count each day. My food goal is two fold ~ track every bite and focus on cooking simple, delicious meals. 3 simple things to focus on and every single one is achievable.
QUESTION OF THE DAY:
What is one thing you are going to focus on this week?
Night all!

Oh so glad you’re back…as I am sooo off the wagon 🙁 And gaining back furiously…..my focus this week is tracking, tracking, tracking…and eating-in…too much going out to all of the local wonderful eateries is not helping! Trying to decide if I should change my weigh-in day from Sunday to Friday????

So glad to see you back! I miss your daily inspiration.
I am trying to eat real…less processed foods. I thought if you this am when I made a piña colada smoothie with chobani coconut yogurt, splash of organic skim milk, splash of simply orange and a banana. I usually use frozen fruit in my smoothies so I had to add ice cubes but you could add a frozen banana instead. It is so heavenly! I haven’t tracked in awhile but know that it would help me stay on track! Eating protein helps me stay full for longer periods.

Missed you so much! Your previous post about canning got me excited to try something new so I bought all the equipment I will need and am going to try making jam this week.

Danica,
Kudos to you for getting back on track. One step at a time. I, too, fell off the wagon, so to speak. Working on getting back to WW before I put on all the 36lbs I lost. It is such a mind game with me. I need to get back to working out as well even if it is baby steps.

My focus this week is on eating only real food – nothing “manufactured,” and no artificial sweeteners or caffeine. Also – drinking at least 3 quarts of water per day to help rid my body of toxins. I’m convinced that chemical additives, fake foods, and artificial sweeteners are the reason so many of us have broken metabolisms and food addictions!
