CEiMB ~ Spinach & Tortellini Soup Recipe

Happy Friday Eve all!  Today was an AWESOME day pack with delicious healthy eats and a new recipe.

I think every day should start off with FREE FRUIT! A little banana, a little apple and a few grapes = 0 POINTS+!

Did you all know that Starbuck’s is doing the 12 Days of Sharing?  Each day they have a promotion, like today, Buy 1 Get 1 Free Christmas Blend.

Ummm, it totally gave me a “reason” to get a tall ff decaf latte (2 points+)

It was sorta drizzly today and I was CRAVING soup.  After Boot Camp, we headed over to Mammarella’s and had the BEST lunch.

I managed to resist their amazing pasta & pizza and come out with only 5 Points Plus for lunch.

That came with 2 delicious slices of focaccia bread (1 points+).

Plus a side salad that was tossed with Balsamic Vinaigrette (2 pts+).  I LOVED the fresh mixed greens but wish they’d toss some tomatoes, cucumber or something else on there to make it look fancy and worth the $3 they charge.  I can buy a whole bag of organic mixed greens at TJ’s for less than this :/  Just sayin’

I think my lunch needed a little protein, especially after working sooo hard at Boot Camp today.  I was hungry about 2 hours later.

Snackage ~ 10 Pepperidge Farm Toasted Wheat Crisps (2 pts+), Colby Jack (2 pts+) and a cutie (ZERO!)

Snack Ideas

For tonight’s dinner, I whipped up a delicious Spinach & Tortellini Soup by Ellie Krieger from my Craving Ellie in My Belly Cooking Group.  This week’s host is Bri of Yoshimi vs Motherhood.

This soup is so simple to make, low in Points+ and perfect for a cold rainy day.

It’s loaded with veggie goodness ~ carrots. onions and celery.

Garlic.

Aromatics ~ dried oregano, fresh thyme (because I had it) and crushed red pepper flakes.

Add 6 cups of your favorite broth ~ I used chicken, but, vegetable broth would work great too.

Chicken Broth

Plus Fire Roasted Diced Tomatoes.  You could use plain, but, I think the fire roasted have a better smoky flavor.

I started thinking it needed ‘more” so I dropped in 2 cups of cremini mushrooms.

Mushroom Soup

Put on the finishing touches ~ fresh spinach and CHEESE Tortellini.  I used the rest of my Schwan’s Six Cheese Tortellini (1 cup = 5 points+)

Vegetable Soups

Sprinkle with crushed red pepper flakes and parmesan cheese.  I sort of remembered the cheese AFTER I ate it ~ oops Smile

The BEST part of this soup ~ THE STATS! Makes 4 LARGE servings, 2 cups each, 6 Points+!

I think the thing I LOVE the most about this soup is you can really use any vegetables you have on hand.  OH and it doesn’t hurt you get a HUGE bowl Smile

I know I have a TON of points left for the day, so I think I may have to add a little Dove Chocolate…..I am such a sucker for chocolate wrappers that talk to me Winking smile

I had hoped to have the site ready today….it’s almost there!  I am SO EXCITED to share the site with you all, but, I want it to be perfect – you know, it’s all about first impressions Winking smile

1.  What is your favorite go to snack?

I think my all time favorite snack is anything that includes cheese and nuts or nut butters

    my favorite go to snack: most fruit! honey crisp apples particularly, but also grapes, tangerines, & pears. If I’m wanting a “candy bar” – I’m really digging the WW chocolate pretzel blast (which tastes like snickers to me) & the dark chocolate turtle bars.
    Another cool weather “pick me up” for me: my own “homemade” mocha consisting of a cup of french pressed coffee, a packet of Nestle sugar free hot chocolate, & 1 Tablespoon of fat free vanilla (or hazelnut) creamer. YUM! *and* ZERO pts+.

    *Points+ alert* Nestle Sugar Free Hot Chocolate packet = 0 pts+
    Swiss Miss Diet Hot Chocolate packet = 1 pts+

    Sans the onions and mushrooms, I am all over that soup. I could literally eat soup every day and never get sick of it.

    Love your soup! I can’t believe you used fire roasted tomatoes though because I overdid a bit on the red pepper flakes and mine was hot! But we still liked it.
