Happy Tuesday all! My day started off with an email telling us to come harvest our fields again today. I’ve decided I am totally addicted to going out into the fields for my workout and zero point eats.
I thought I brought home less this time but ….My favorite thing by far is watermelon.
I whipped up a quick breakfast on the go that stayed with me all morning for 5+ hours.
2 scrambled eggs with a Trader Joe’s hash brown patty fried in 1 tsp avocado oil (5 sp).My lunch wasn’t fancy but it was so good. I took my leftover turkey taco mix and poured it on top of parmesan zucchini to make this cheesy taco zucchini dish. 5 sp.
I had a big bowl of melon for dessert.
After harvesting in the fields for a little over an hour, I snacked on a banana and Jarlsberg Mini Swiss cheese before heading home (2 sp).
I made this Black Bean and Cheese Chilaquiles recipe for dinner tonight. I love that it came together in under 30 minutes. I think going forward it would be better with a little enchilada sauce and a dollop of Greek yogurt.
I sauteed my poblano and onion in a little olive oil until soft, about 4 minutes.Add black beans, tomatoes, lime zest, lime juice and chipotle.
Add in the healthy tortilla chips you make following this recipe. It’s my go-to and so good because you get more chips for less points.
Once the mix is slightly softened, topped with cheese and green onions. Broil for 1 minute to get the cheese all melty.
I love every dish that includes chips! Serve with a wedge of lime on the side. I had 1/4 of the recipe for 6 WWFreestyle SmartPoints.
