Happy Friday Eve all! Since it was a winery day and I knew there would be harvest traffic, I was up early with this fast Cinnamon Toast Crunch breakfast. It’s not really as fancy as it sounds. This past weekend, on a whim, I thought it would be a good idea to buy this bread.
Nope, I didn’t scan it and found out it was 4 Smartpoints a slice once I had it home. In my head though, I thought – no problem, my waffles are 4 Smartpoints so I’ll treat this like waffles. Into the freezer it went.
I toasted up my first slice today. It smelled amazing with alot of little cinnamon spots (no raisins).
Topped with 1 Tbsp crunchy almond butter for a fast 7 Smartpoints breakfast. Yum!
My first meeting was at Starbucks so I ordered my usual. Grande iced Nonfat Latte with caramel on top (3 sp).
The Husband had the day off so he met me for lunch at Agave Mexican Grill.
21 chips broken into bites and dipped (7 Smartpoints)
Fajita Shrimp Salad (Shrimp, grilled peppers & onions, pico de Gallo, 1/8 avocado, 1 Tbsp pumpkin seeds, a few tortilla strips with 1 Tbsp Honey Chipotle Vinaigrette (6 sp)
Tonight’s dinner involved these Fontina & Ricotta Calzones. It definitely helps to prep everything first as this recipe goes together quickly.
I’ve never had a Serrano pepper before so I had to try it before adding it to the corn mix.
I was a bit scared but it wasn’t hot so I used the entire pepper.
I can honestly say I’ve never had Fontina cheese either – It’s pretty intense and I have to say it almost made my list of stinky cheeses to never eat.
The filling was easy to make, but, rolling out the dough stresses me out. Mine always comes out as abstract shapes….
Then, it kinda turns out looking something like a calzone.
While the calzones cooked, I whipped up this homemade fresh tomato basil dipping sauce.
I love how the sweet corn and peppers balanced out the rich cheesiness but the homemade sauce really added a nice garlicky tangy. I think I pushed The Husband too far on adventurous eating…then again, I’m proud of him for eating corn in his food lol.
I had about 1/3 of a calzone (they are huge) for 10 Smartpoints. It wasn’t until I finished I remembered I had salad to go with these. Oh well, next time even though I probably wouldn’t make these again. They take so much work!
