Coco-nutty!

Thanks everyone for all the well wishes yesterday.  I actually slept in this morning and  woke up thinking I might just be beating this cold after all.  I told myself since I did not get in a workout on Thursday or Friday that today, I was going to hop on the treadmill and just go with it.  Move it in one way or another, but, I was not going to let this cold get me down.

And move it, I did!  I actually managed 20 minutes of jogging with ZERO walking breaks – success!  Don’t mind that I pretty much wanted to just lay down on the ground to rest after lol……

Instead, I took that to mean, I just needed to refuel so I whipped up an Oatmeal Protein Pancake and topped with 1/2 Tbsp Whipped Butter, 1 Tbsp Pure Maple Syrup, banana “chips” and a sprinkle of unsweetened coconut. (2 WPA for SF), 10 points+ for the entire pancake with toppings.

I haven’t decided if it’s a good thing or not, but, The Husband has taken a liking to eating whatever I am making for breakfast include these pancakes….and he loved them!

On our way to stock up at the Farmer’s Market, we stopped for Starbuck’s ~ I was so sad when our Barista told me they were on their last bottle of coconut for the season – NOOOOOO!!! So sad….

Venti Iced Dirty Coconut Coffees at Starbuck’s (Iced coffee with 1 pump mocha, 1 pump coconut and a splash of 1/2 & 1/2). (SF + 2 WPA) – 2 points+

Before heading out to see The Bourne Supremacy which is really good if you do not compare it against all the other Matt Damon Bourne films, we stopped at Mary’s for Big Salads.

I wish I got a small salad since I only managed about eating about half of this with my ranch on the side.  (SF+4 WPA for the dressing & cheese) – 9 points+

I had actually planned on having leftover Butternut Squash Soup for dinner, but, my dinner sort of turned into small bites.  I snacked on a bowl of watermelon that I cut up for the week…..

Then, I had 2 of these Brown Sugar Banana Nut Mini Muffins (SF + 3 WPA) – 3 points+

And two of these Mini Pineapple Coconut Muffins.  I definitely perfected the recipe this week and will be posting it soon to share.  They totally remind me of pineapple upside down cake with a coco-nutty kick in a muffin. (SF + 3 WPA) – 3 points+

I actually baked all of these for everyone at my Weight Watchers meeting tomorrow….that way, I can have a few and not keep them in the house taunting me all week to eat them.

STATS (12 am – 9 pm)

  • 2,962 calories burned
  • 12,356 steps taken
  • 10 WPA used, 0 WPA remaining (27 daily points+) ~ so glad for a new week to start tomorrow!

We are heading over to the meeting in the morning, then taking a mini road trip.  I should be back tomorrow with this week’s menu and weigh in results.

    Hi Danica,Your WW meeting sounds like fun, that is to say that you are able to bring in items to pass out to your members. The last and only time I brought a sample to my meeting was some store bought CORN THINS to let everyone try if they wanted and I was told only the bag was allowed.(Only WW items are to be sampled from time to time) needless to say I was a little embarrassed. Have fun at your meeting, get inspired and keep up the great work you inspire me everyday……..Lia

      I find it really varies by leader and location. Some leaders are more by the book than others.

    Hello and love the muffins, I really want to try them, just one question, can I use Can’t believe its not butter in the recipe? That is what my husband and both like?

      Hi Colleen,

      As long as you are using stick butter versus spray butter or tub butter, then, the recipe should work.

    Hi Danica!
    When you go to starbucks- do you order the drink by name or with instructions? I am not much of a coffee drinker- but I’ve been loving the Dirty Coconut Iced Coffee. I can’t bring myself to order it by name because I’m afraid they’ll look at me blankly. lol

      Hi Keri,

      I order my drinks based on what I want in them since not every Barista understands the lingo. I will order it as Venti Iced Coffee with 1 pump Mocha and 1 Pump Coconut, no room for cream. Then, I will add my own splash of half and half since they add way too much when you ask them to do it for you.
