Happy Monday all! Thanks to all of your for your comments on yesterday’s post. You all seriously have a way of motivating and inspiring me by sharing your struggles with me. Oh and The Husband said thanks for the comments on his Mom’s Day Cards. He definitely is a hoot!
This morning I was back at it with my 5 AM workout ~ I hopped on the treadmill and rocked my 30 minutes of Couch to 5K! As crazy as it sounds, it is my 5 AM workouts that make it a million times easier to tackle any challenges that my day brings.
On my way in, I stopped for a Dirty Coconut Coffee! I am so excited that Starbuck’s has their coconut syrup back ~ it’s the little things! I’ve been waiting for this syrup ever since they stopped making it last fall!
(iced coffee with 1 pump mocha + 1 pump coconut with a splash of 1/2 & 1/2) 2 points+
You know the totally random part about my Dirty Coconut Combo ~ I do NOT like Almond Joys or Mounds Bars, but, I totally imagine this drink is what they probably taste like
Breakfast involved a Maple Morning Star Veggie Sausage (2 points+)
Eaten with a big bowl of melon while I packed up The Husband’s Lunch.
No matter how many times I am rushing to get out the door, I always make his lunch even if it means I “have to” buy mine at the café.
I ended up with my new favorite thing ~ Mini Ham and Cheese.
On my roll, 1 slice Ham, 1 slice swiss, lettuce and baked lays (7 points+)
Plus Veggies on the go!
Sometimes it is the simple things that are so completely delicious.
Dessert x’s~ the “secret” to portion control ~ making sure they are sitting in a bowl in front of your co-worker (2 points+)
The Husband had dinner ready as soon as I walked in the door! I knew all I had to do was buy his FAVORITE Bill Bailey Carne Asada and he would be all about cooking for us
I made up TWO Carne Asada burritos topped with 4 oz Grilled Carne Asada and 1 oz of reduced fat sharp cheddar cheese.
Then, I topped them with a bunch of spice and crunch ~ jalapenos, romaine blend, tomatoes, green onions and 1/4 avocado.
12 points+ for both! I added hot sauce and drizzled with 0% Greek Yogurt post picture.

I have to say having dinner on the table as soon as I walked in the door made everything right in my day….then, seeing your comments on my post yesterday put everything in perspective and made my day!

One thing good about my Monday was that I made dinner at home at we didn’t go out to eat, BUT one thing good about my Tueday is I am running to get on my exercise bike because of YOU! Thanks for the motivation Danica 🙂

My Monday was outstanding, once I got home. My 12 year old daughter and I cooked dinner together! We had chicken tacos. For mine, I used romaine lettuce as the “taco shell”. Quick, easy and healthy meal. This is one of my all time favorite go to meals. It was great Monday!!

My Monday was great because we had dinner with family and I didn’t make a horrible choice like I would’ve in the past. 🙂

Monday was good because I had a healthy breakfast and went to bed at a decent time so that I got 7 hours of sleep!
Also, I’m excited about coconut being back too! My question – if I order a dirty coconunt coffee, will they make it that same way or do I need to tell them about the splash of 1/2 and 1/2??

Hi Penny,
You would have to request the 1/2 and half and let them know just 1 pump of each. I actually tell them no room for cream or not to add it because I find that even their splash is like a 1/4 cup versus a splash.

What type of tortillas do you use (in your Carne Asada and other dishes you have posted)?

Hi Amy,
It depends because I always vary the tortillas I use. My favorite are Trader Joe’s Organic Corn and Wheat and their Sonoma Style (1 points+). I sometimes will just use Mission Extra Thin Corn Tortillas or their artisan tortillas too.

The best part of my Monday – when I got home from work my husband was finishing up with the planting of our vegetable garden – tomatoes, peppers, cucumbers, eggplant, beets, radishes, oregano, basil, parsley, garlic and mint; the worst part – knowing I have to wait to eat it!

Best part of Monday….It was a rough day because two of my kids were home sick, which meant I had to take a day off too. But I made awesome chicken salads for dinner loaded up with all sorts of good veggies, just a sprinkle of cheese, and had a fresh orange for dessert. Since I was so good at dinner, I had a Mike’s Hard Lemonade Cranberry later. 🙂

my good thing was that Ed had dinner ready when I got home from work.Grilled pork chops that had been in Soy Vay brown rice and steamed veggies! LOVE!

Whenever I order my Dirty Coconut Coffee Iced, I always get a Venti and it is 4 points+. If I order a hot Dirty Coconut Coffee I will usually go with a grande for 4 points+.

You and I are completely opposite- although I love my 5AM workouts, I most often hop onto the elliptical or spin bike and stay away from the treadmill- I don’t feel awake enough and fear that I’ll end up flat on my face 😛
