Colorful Linguine with Chicken Apple Sausage

The movie we ended up seeing was The Ugly Truth with Kathryn Heigl.  I LOVED it ~ so funny and there were parts of it that has us laughing so hard we had tears in our eyes.  I highly recommend it if you are looking for a hilarious romantic comedy.  After the movie we headed to Barnes and Nobles to check out the travel section 🙂

I knew exactly what I wanted to make for dinner and it involved a ton of fresh farmer’s market veggies from this morning, Trader Joe’s Chicken Apple Sausage (made with Maple Syrup!) and whole wheat linguine.  This was so fast and easy to make I cooked everything up while the noodles boiled.

1 package Trader Joe’s Chicken Apple Sausage, browned in 2 tsp Extra Virgin Olive Oil

Remove it from the pan and sauté the following veggies:

2 tsp Extra Virgin Olive Oil

1 sweet onion, sliced

1 large or 2 medium cloves garlic

4 small colored sweet bell peppers, sliced

2 cups sliced mushrooms

Season with sea salt, pepper, crushed red pepper flakes

Remove from heat and stir in 2-3 small sliced heirloom tomatoes and freshly chopped basil.

I served mine over 1 c Whole Wheat Linguine with a sprinkle of freshly grated parmesan cheese.

I LOVE these sausages and an entire sausage is only 3 Weight Watcher Points.  They really gave this dish a nice sweet, savory taste with a little kick of spice from the crush red pepper flakes.

I am off to read my book, relax and maybe have a bowl of Breyer’s Vanilla Bean Ice Cream with whipped cream & fruit.  I’ll update with a picture if I do 🙂

Tomorrow morning we are heading up to Lake Tahoe for some hiking, biking, a picnic lunch, gambling and fun ~ yeah!  I am not sure that I’ll post before we go, but, I’ll be sure to give you all a full recap when we get back.

    Thanks for the movie review! I’ve been wanting to see that! I actually went to see “Julie and Julia” tonight, which was cute…but long. Your dinner looks so good…especially the sausage….what is it about sausage that is so dang good?!

    The Ugly Truth was a great movie. I don’t know why it didn’t get good reviews because I thought it was hilarious!

    Glad you enjoyed it and ended the evening with that incredible dinner. I adore TJ’s chicken sausage. I think my favorite is the Apple Chardaony or the Basil Pesto. Every time I go, I try a new flavor and not once have I been dissapointed.

    I saw some tasty looking organic chicken apple sasuages today at the farmers market but I had to pass on them because I am going to try to keep this week meat free. Have fun in Lake Tahoe!
