Hi all! I have really been craving something baked lately….muffins, cookies, cake. I’ve been going back and forth all week until yesterday I realized I want cinnamon coffee cake or french toast. I combined the two and for the first time ever, I made this overnight cinnamon french toast casserole. I used really good freshly baked, doughy sourdough bread, poured over creamy protein packed eggs and topped it with a buttery cinnamon sugar crumble. It really was everything I’ve been craving all in one.
The added bonus – 1/8th of the pan is only 6 Smartpoints. I added extra sweetness with a warm pure maple syrup drizzle and 1/2 a mango for 7 Smartpoints.
Recipe coming up this week.Today’s workout involved a 56 minute walk on the treadmill. I really think my jogs are helping my walking as I felt like I could’ve kept going and I was walking at 4 mph for most of my walk.

It’s super easy to make – cut some veggies, buy some precut veggies, add rotisserie chicken and you have this big bowl of deliciousness.All tossed together making 4 huge 2 cup salads.I started with 1 cup so I could have “seconds” for 6 Smartpoints.
