Happy Monday all! Today started with one of my favorite things and ended with one weird new “thing”. I couldn’t wait to dive into breakfast this morning as I whipped up a batch of the Crustless Kale Parmesan Quiches for grab & go breakfasts this week. I like making minis but sometimes full size muffins feel like more.
Lunch was pulled from the freezer and fridge as I rushed out the door this morning. The Husband was in charge of dinner tonight as I had to work late to finish up my budgets. He did great with tri tip steak and salad. He really wanted smashed potatoes but wasn’t sure how to make them. He tried using canned potatoes which I’ve never had in my life. They were not bad but we’re kinda weird to me…It didn’t matter though because I was so happy not to cook and I know how hard he tried (you should see the pan lol)!

D: 3.5 oz grilled Tri Tip (3 SP), 1/2 c potatoes (2 SP), Salad w 2 Tbsp sunflower seeds (1 put on my salad, 1 in my mouth lol) with 1 Tbsp TJs balsamic (4 SP)

Forgot to ask: just changes to size of pan and length of time cooked for the kale quiches?

I did end up cooking them a bit longer, about 25 minutes or until the tops were golden.

I am a big fan of Weight Watchers Simply Filling (aka CORE) Technique. I alternate between points and simply filling but think I naturally gravitate towards Simply Filling anyway.
