Hi all! I think I may have found a new way to make my Cilantro Chicken Pot Sticker Soup that kicks it up a notch without adding a bunch of ingredients. All you’ll find in this delicious soup is a tasty Miso, Ginger Broth, tons of mini potstickers (you get 9 for 1 smartpoint!), Teriyaki Chicken Meatballs and a whole bunch of veggie goodness.
Did I mention you get 1/5th of the entire pan for only 6 Weight Watchers Smart Points?!
It’s so easy to make all you need is these 4 things plus a couple “extras” if you choose.
- 1 bag Trader Joe’s Mini Chicken Cilantro Won Tons
- 1 box Trader Joe’s Miso Ginger Broth
- 1 container Trader Joe’s Fresh Asian Veggies or any veggies you have on hand
- 1 pack of Aidell’s Teriyaki Chicken Meatballs (protein power with 3 balls for 4 points!)
Heat 1 tsp sesame oil in a large soup pan and dump in the veggies. Saute until softened, about 5 minutes.
Add your broth and bring to a boil.
Meanwhile, quarter your meatballs so you get more bang for your buck with lots of teriyaki pineapple pieces throughout the broth.
Add the entire bag of potstickers plus meatballs to the soup. Cook 2-3 minutes to heat the potstickers.
Remove from heat and add these optional items: handful chopped cilantro & green onions, splash of hoisin, sriracha and white pepper.
Then divide into 5 bowls and dig in! It’s seriously amazeballs ~ no play on words intended!
Today’s eats were pretty delicious. I always bundle up in the winter in layers and The Husband always asks me if I want some Malt-O-Meal when I do. Well, this weekend I finally picked up some Malt-O-Meal for us and it made the perfect breakfast. Lunch involved this delicious soup above (eating it all week!) before I headed off in the afternoon to a Women for WineSense workshop at Trinchero. Their winery is so beautiful! I love when a meeting starts with Prosecco, moves on to delicious wine and involves, olives, nuts, and cheese to boot. It definitely helps with keeping my attention!

B: 1 serving Malt-O-Meal topped with 1/2 Tbsp Land O Lakes Whipped Butter and 1/2 Tbsp brown sugar (5 sp), 2 Jennie-O lean sausage links (1 sp), 1/3 cup organic blueberries
S: Tall nonfat cappuccino with caramel on the foam (2 sp)
L: Chicken Potsticker Soup (6 sp), apple, 1 Tbsp Macadamia Nuts (2 sp)
S: Banana, rf string cheese (2 sp)
S2: I am proud that I didn’t have the hot appetizers and stuck to a little cheesy goodness. 2 oz prosecco (2 sp), 2 oz forte red wine (2 sp) ~ I couldn’t totally had more!, 1 oz hard cheeses with 1 cracker (4 sp), 6 mixed olives & 7 marcona almonds (2 sp)
D: 1 Heaping cup Sausage, Bean & Kale Soup (4 sp) ~ recipe coming up this week!, 1/3 oz TJ’s crispy cheddar bites (2 sp)

I didn’t realize I couldn’t get the meatballs at Trader Joe’s, so I bought spicy chicken sausage – korean inspired. They were out of the Asian vegetable mix, so I bought the Healthy 8 vegetable mix. All I can say is that this is an extremely flavorful soup! I find it difficult to limit myself to one serving 😉

I am new to your blog, sorry if this has been asked-how do you order at starbucks, to make sure they don’t give you the wrong stuff (i never know if I”m supposed to ask for sugar free caramel etc)? Thanks!! PS- can’t wait to make this potsticker soup!! YUMM

Thanks for reading. I always order Nonfat then ask specifically for any additions I want such as caramel drizzle only on the foam or on top. It’s the actual caramel syrup and not the liquid. They usually get it right but if they don’t I have them remake it.
