Happy Monday all! I officially survived my first day back at work after our long vacation. More importantly, I have two solid POP (perfectly on program) days with a new recipe, some tasty eats and a treat. The Husband bought me a few new “friends” for my office. Are they not the cutest?! I can’t pick a favorite because I love them all for different reasons – the mouth-less mummy, adorable bat I thought was an owl – (hoot, hoot), or the candy corn toothed ghost.I whipped up this Turkey Quesadilla Casserole last night when The Husband asked for cheese quesadillas and I wanted a casserole. It’s packed with turkey, beans, corn, cheese, tomatoes, green chilies, tortillas and more cheese. All for 9 Weight Watchers Smartpoints a square.

L: I made up this soup on Sunday for lunches this week – Butternut, Kale & Italian Sausage Soup (3 sp), Trader Joe’s Lite String Cheese (2 sp), Apple, Reese’s with Pieces Mini (2 sp)
S: Perfectly hard boiled egg (2 sp), banana
D: I started Turkey Quesadilla Square (1/8th the pan for 9 sp) and skipped the salad as The Husband said no salad. I probably should’ve made me a salad as I had another 1/2 square (5 sp)
