I’m so glad the weekend is here. I feel like I’ve had a solid week back on track and I’m looking forward to my WW meeting tomorrow. Today was a very productive but busy work day where I really struggled to not eat everything. I did dive into the office chocolate and enjoyed.
I really wanted to love that WW Southern Corn Flake “fried chicken” but I have to say it was just OK. I even spiced it up a bit with some Frank’s Red Hot and it still could’ve used more kick. The buttermilk really keeps it tender and the cornflakes add a great crunch. It has potential to be delicious so I might give it another try. I just need to get the idea of crushed BBQ chips instead of cornflakes out if my head lol.
B: Double Decker Eggwich (1 slice Honey Oat oroweat bread, 1 fried egg, 1/2 Tbsp whipped butter) – 5 SP, 1/4 c blueberries, Tall Nonfat Cappuccino with caramel on the foam (2 SP)
L: Tuna Salad (5 oz Tjs Albacore Tuna, 2 Tbsp light mayo, 1 tsp mustard, 1/4 c red onion & celery, dashes of dill, garlic salt & pepper) – 4 SP, scooped up with 6 Whole Foods entertainment crackers, cucumber chips and peppers – 4 SP
Dessert: 6 peanut butter m&m’s then 2 chocolate balls (5 sp), tall dirty cappuccino (2 SP)
S: banana, string cheese (2 SP)
S2: 2 Tbsp sunflower seeds, apple (working late)
D: WW Soutern-Style Fried Chicken (4 SP), asparagus

Re the chicken, add some spices to the corn flakes, like garlic and onion powder; Italian seasonings, chili powder, etc.

Good idea on the chicken. I will give that a try. A dirty cappuccino is a regular Nonfat Cappuccino with 1/2 a pump chocolate. It’s delicious without being too sweet.

Breading for anything must be properly seasoned at each step. So, yes, dried spices to the flour and corn flake stations, and maybe some hot sauce in the buttermilk station, would definitely help. Cooking the chicken on a cooking rack would probably make it extra crispy too.

So true! I did add a little seasoning to the flour and some Frank’s red hot to the buttermilk. I should’ve added more obviously and I never thought to season the cornflakes but that would’ve definitely helped.
