Hi all! Today was a super fun day that involved an awesome am walk, a trip to the farmer’s market, a Thai lunch out and some adventurous eats. There is this vendor at the market who specializes in mushrooms of all sorts. Every week he tries to convince me to try something new, but, I rarely do because let’s be honest – the way some of those mushrooms look kinda freak me out.
I’m your basic white or as my mushroom friend calls me “brown” mushroom girl. Yep, every week I buy the most delicious “browns” aka cremini mushrooms from him. This week he snuck a King trumpet mushroom in my bag and told me to try it. It’s the big white one on the bottom.
He said I could slice it however I like so I just sorta went with that. Then sauteed it in a little olive oil with salt & pepper.
I totally cooked these by their lonesome in case I didn’t like them.
The verdict – it’s so amazing. It’s really meaty tasting like a portabella but with a light mushroom taste. The Husband said it tastes like chicken but I think he is just confused lol. I’d definitely make these again.
And I’d actually mix them in with my browns š
Today I used this hot sauce on my Healthy Eggroll as a change from Sriracha. It gave my Eggroll a tasty sweet & spicy kick. After the Farmer’s Market, my coworker and I headed to my favorite Thai place – Mini Mango on Main for some more adventurous eats. I think the Tiger Prawns made with red curry & like (like prik king). I also love that their steamed potstickers were topped with coconut yellow curry, chili oil & Sriracha. We also shared a papaya salad and See Ew noodles.

Unless I do a treadmill, I only get like 3000/day.

It’s easier to eat just one drumstick with your plate is full of so many other good things. I do sometimes eat two though.
When dining out, I search the restaurant. If it’s not available then I try to find something similar, i.e., another restaurant with the same type of food or just the food in general. Last but not least, I break down the ingredients if I can’t find anything as a complete meal.
I’ve been digging my lunchtime walks that last about 50 minutes. I also try to convince my coworkers to have walking meetings or I take a conference call while walking. I’ve tried walking versus emailing questions and just in general moving more.
