Hi all! I had an awesome post for you all that I did last night but I unfortunately think it’s gone and lost forever…Sad. I’m currently in the process of switching my host so hopefully that will all be sorted by this weekend. The cool part is you all will see things loading much faster on my site when all is said and done. Ok enough with the techie stuff…Onto todays eats!
This weekend I whipped up a batch of these 1 point Simply Filling Turkey Apple Sausage.
Just so I could make these Sausage Egg McMuffins earlier this week. (Fried egg topped with 1 PC reduced fat cheddar, 1 sausage, halved & a real deal sourdough English muffin) – 9 SmartPoints. You could save bon points but using a light English muffin or omitting the cheese.
Today I’m proud of myself for coming home to cook this Weight Watchers Beef and Vegetable Stirfry. I debated my entire drive home and even texted a couple friends asking – do I stop & get Panda Express or cook just for me since The Husband was having dinner with his buddies. My friends all gave me permission to get take out lol.
In the end, I decided to do what would make me feel the best about me and I’m so glad I did.
This was delicious!
Anytime I make Asian food, I love making these Trader Joe’s Chicken Spring Rolls. They bake up crispy and are only 4 SmartPoints each.
My favorite way to eat them is dipping them in Thai Sweet Chili Sauce.
