Happy Tuesday all! I actually was about to write Wednesday….Wishful thinking perhaps lol. This morning I was up super early to head to the winery for First Aid & CPR training. Every time I attend this class, it always makes me want to be healthier. I know it sounds weird but I guess it’s more about doing everything I can to not only be the best me but to prevent some of the ailments you learn about in training.
The good – I had 2 amazing salads in one day and could still eat another salad if it was like these. I’m now certified for another two years and I was able to take care of another meeting during lunch at my favorite spot in Healdsburg – Agave. I can admit I’d drive miles for that shrimp salad – it’s so good words cannot describe it.
After training it was off for another long drive to have dinner at Chipotle with The Husband before meeting my hairdresser. I love that she brought me a dirty Americano so I can ramble on while getting my hair done.

D: @ Chipotle Salad with chicken, Fajita Veggies, pico de Gallo, corn salsa, a little sprinkle of cheese (yep I tell them 1 Tbsp and I get “The look”), a little red sauce and a scoop of The Husband’s Guacamole (11 SP), I’m counting 2 SP for the bites I had of his quesadilla too
S: Tall Dirty Americano (1 SP)

My mom’s potato salad. My mom will be 101 in May, and she hasn’t cooked/baked in many years, but she was the best when she was in the kitchen. Even her egg salad sandwiches on white bread – heavenly.

My Mom’s macaroni salad. Back in the 80s she came up with a healthy version seeing as we were all following TOPS (weight-loss program like Weight Watchers used to be way back when). Light sour cream was her base for the dressing and it was almost equal parts veggies and noodles. I loved it, but she never loved making it since she wasn’t a fan of cooking. That was usually up to my Dad or I ^_^
