Hi all! This morning, I was up early to check off my workout first thing before whipping up another deliciously easy breakfast. The Husband picked out these frozen hash brown patties and I have to say I kinda love them. I “fried” 3 of them in nonstick spray with 1 teaspoon olive oil and they came out perfectly crispy.
I met one of my great friends for lunch at Agave today. Great food, even better conversation. Since I was in the area I had to get a Flying Goat Dirty Latte for my drive home – so, so good!
Today was a day I thought I might go over on my points, but, I managed to balance it out with dinner and stay on track.
Dinner tonight involved a modified version of this Cheesy Chicken with Ham & Jam Cooking Light recipe. I used 2 Tbsp of apricot jam instead of blackberry. It was a big hit with The Husband and I never told him about the jam part or he would’ve never tried it lol. Its like an inside out chicken cordon Bleu.
