Hi all! I wanted to try a new idea for a fast dinner tonight with hardly any dishes. I took my shrimp scampi recipe tossing everything together except the fresh herbs with a little splash of wine in a foil packet, sealed it and put it on the grill to cook for about 8 minutes. I topped it with fresh basil and served it with a little bread that I grilled.
The verdict – I think I love stove top and oven scampi better as the foil packets steam it. That being said, grilled bread dipped in the garlic sauce is amazing.
