Daily Snap: Moo Shu Pork Stir Fry

Tonight’s dinner was seriously amazing, as in you all have to try this simple Moo Sho Pork stirfry. It’s loaded with flavor – salty, sweet, spicy, gingery, garlic goodness that tastes just like what you’d get in an Chinese restaurant but better. You can find this recipe in the Weight Watchers Dinners In A Flash Cookbook if you have it or you can follow this link for the recipe.

I dig the time saving shortcuts that make this a recipe you can get on the table in 30 minutes or less.Thinly slice a 1 lb pork loin into thin strips, season with a little salt and pepper then saute over medium heat in nonstick spray until browned, about 3-4 minutes. Set aside.

In the same pan, add 10 oz cremini mushrooms and cook until softened, about 5 minutes.

Meanwhile mix up your secret sauce – housing, sesame oil, rice wine vinegar, Sriracha, ginger and garlic.

Add a 16 oz package Cole slaw mix and your secret sauce. Stir until combined and cook 3-4 minutes until the cabbage is wilted.

Remove from heat and return pork to pan along with a sprinkle of green onions and cilantro.

Tadah! I cannot tell you all how awesome this dish is. The Husband gets major props for doing all the stirring while I chopped and mixed. Team work!

Scoop 1 1/4 cups of Moo Sho for 5 SmartPoints and serve with 1/2 cup Trader Joe’s Frozen Brown Rice for 2 SmartPoints.

S: 2 oz honey turkey (1 SP), banana

L: Chicken Potstickers Meatball Soup (5 SP), 1 Tbsp Macadamia nuts (2 SP), apple, dessert 6 peanut butter m&ms (3 SP)

S: RF String Cheese (2 SP), 2 clementines, Caramel nip (2 SP)

D: 1 svg Moo Shoo Pork Stirfry with 1/2 cup brown rice (7 SP)

31 daily SmartPoints for one tasty day!

I just have to say holy moly that was alot to type on my phone but so worth it to share my day 🙂
