Hi all! This mornings breakfast burrito is something I’ve been thinking about all week long. It’s a super easy, Weight Watchers SmartPoints friendly breakfast that is packed with protein to keep you full for hours.
I always start off with a nonstick skillet sprayed with nonstick spray then I add a little pepper and onion. If you have mushrooms these work well too. Saute until softened, about 3 minutes.
Whisk up your eggs with a splash of milk, hot sauce, salt and pepper then add to the pan cooking over medium low heat until scrambled.
While the eggs cook, microwave your turkey bacon (placed between paper towels) about 1 minute per slice or until crispy. Warm your tortilla on the stove for 3 seconds….Then build your delicious breakfast burrito.
Tortilla + a Sriracha squiggle + 2 pieces Trader Joe’s Peppered Turkey Bacon + 1/2 your egg mix. Wrap, roll and dive into 6 points of goodness. Served up with half an orange on the side.

B: Burrito + 1/2 an orange (6 SP)
S: tall nonfat cappuccino with caramel on top (2 SP)
L: @Ristorante Allegra: I had way more bread and olive oil dip than planned but I balanced it out with a healthy salad. I’m proud I didn’t devour the appetizers when they came out and stuck to a small plate of bites for dessert. Not totally as planned but definitely way better than I could’ve done at an Italian food place.

I can’t wait for the long weekend and our vacation to begin! Just one more day and one last work lunch with our bankers where another salad is the plan.
