Happy Friday all! I’ve learned two things from you all on yesterday’s post. One – the “s” is there because Brussels Sprouts are from Brussels! Two – Flashback Friday it is for my weekly recipe post from the archives. I have to say it’s so cool that a few of you still make the Lasagna Cups after all this time.
I couldn’t wait to make breakfast this morning. I’ve been thinking about these easy sausage and egg breakfast burritos all week. You get all this deliciousness for onion 5 SmartPoints . Here is how I made them.
Place a small skillet sprayed with nonstick spray over medium low heat and saute the following for 4 minutes.
* 2 Tbsp red onion, diced
* 2 Tbsp red bell pepper, diced
* 2 cooked Jennie-O Lean Breakfast Sausage Links, diced
Whisk together an egg plus one egg white and pour over the mix. Stir until scrambled. Stir in
* 2 Tbsp diced cherry tomatoes
* 2 Tbsp cilantro
Heat a 2 SmartsPoint La Tortilla Lite Tortilla for 30 seconds. Remove, add a Sriracha squiggle and your egg mix, wrap it up and dive in.

D: Open Faced Cheeseburger w caramelized onions & secret sauce (10 SP), 1 1/2 c crispy Pablo cauliflower (1 SP)….Yep, I actually ate cauliflower and liked it!
