Hi all! Today started off on the right foot, literally and figuratively, with a 4 mile walk. I love setting the tone of my day in the AM like that as it’s one thing checked off my list and makes me want to make it a good day.
Today’s eats can be summarized in 2 words: Simply Delicious….and exactly what I needed.
Breakfast was the last of the Chili Relleno Egg Casserole – sad! That just means I need to post the recipe for you all soon.
Lunch was just plain awesome. This might be my favorite new soup this year. I used fresh & crunchy toppers so I didn’t “need” chips. This recipe is coming up soon too.
I’m feeling pretty proud with how today went down and my weekend prep paid off.
Dinner ended up being a last minute thing as I got home late and The Husband wasn’t feeling too well. I really wanted a glass of wine with my Bambino but I resisted since I already had my drinking points in coffees today lol.
