Daily Snap: Stretch Your Chips

Happy Super Bowl Sunday all! What eats and treats did you make today?  I have to say, I thoroughly enjoyed all my healthy eats today and fit them nicely into an on track day.

Breakfast was the only thing I could think of after The Husband had me up at 5 am because he was like a kid at Christmas excited to go to the Alameda antique fair. He loves it, me, well, I like that it helps me hit my 10K daily steps and I get to catch-up on my audible books!

Lunch was at Dos Coyotes – fresh California Mex.  We ordered chips & guacamole to start. I “stretch” my chips by taking a napkin, placing 4 chips on it that I break into bites to scoop up salsa or guacamole.  Then, I repeat this 2 more times and it feels like a lot of chips.  My salad usually arrives before I get through them.

Dinner was super easy and delish…The best part, I have precut veggies to snack on all week.

Today’s thought: I’m super proud that I netted a 6 lb loss in January and my goal is to repeat it again in February.  I need to get back to workouts so that’s my other goal even if I just start with walking at lunch.

Aside from that, I’m really not looking forward to this week at all but I plan to make the most of it – work lunches, meetings and deadlines by coming out on top with a loss this Saturday.

Daily Snap Recap:

B: Jimmy Dean Farmers Egg White Omelet (6 sp), 1/3 c blueberries

S: Tall Nonfat Cappuccino with caramel on top (2 SP)

L: @Dos Coyotes – Yucatan Chicken Salad (I ate about 1/2 for 7 SP), 12 chips with 2 Tbsp guacamole & a lot of salsa (6 sp)

D: Veggie Tray Veggies w 2 Tbsp LF Greek yogurt ranch (2 SP), WW Best Ever Steak Sandwiches (8 SP)

DS: 4 bites of The Husband’s German Chocolate Cake (4 SP)

  • Sloppy Joe Crescent Muffins, salad
  • Grilled Tri Tip, brown rice,  Green Beans
