Happy Thanksgiving Eve all! This morning I was up early and out the door. My first stop was taking The Husband a Starbucks so that totally meant I got to get one too. Next up was a little Christmas shopping and picking up the last few things for our Thanksgiving feast.
Before jumping into prepping for tomorrow, I hopped on the treadmill for an hour.
This afternoon, I roasted butternut squash, walnuts and made the dressing up for our Fall Harvest Salad.I made Homemade Cranberry Orange sauce for our turkey but also so I can make mini muffins with it this weekend.
I prepped the fixin’s for stuffin’ muffins.
After watching all these Thanksgiving shows this week, I decided we needed this Streusel topped Sweet Potato Casserole. I parbaked it so I can finish cooking it tomorrow with the stuffin’ muffins while the turkey rests.
I am super excited about these healthy Individual Lemon Cheesecakes I made for our dessert. I’ll serve them with fresh whipped cream and berries. Recipe coming up soon.
I actually managed to make it through the day without sampling/tasting my way. Success!
For dinner we had these Blue Apron Kake Quiches which were more cheese than egg. I think I like it the other way around better but these were still tasty. It was served up with a delicious romaine, Apple, almond salad topped with a lemon balsamic vinaigrette. I am definitely making that salad again.
I finished everything with time to spare before Survivor started.
