Happy Sunday all! Today has been such a productive day checking off my to-do list and doing a little spring cleaning. Breakfast was on the lighter side as it’s slim pickings since we are trying to use up what’s on hand. The Husband surprised me with an awesome lunch date. If you all haven’t figured out already, I love pretty much all Asian food. He kinda likes it but would much rather have a burger any day.
I thought he was kidding when he said let’s go to Wah Shine for lunch. When I go to Chinese food, I usually skip the Carby item and get a main protein/veggie Stirfry with extra veggies. Today, I made an exception deciding on 2 of their homemade potstickers with a Stirfry, no rice. Totally worth it.
Can I just say I felt all grown up and fancy today making roasted chicken for Sunday dinner complete with a dessert?!
Dinner was the last of our Blue Apron meals – Chicken Under A Brick. I love ordering this when we go out to eat but I think making it isn’t as fun. It was still just as delicious and my day left room for one delicious dessert.

After dinner The Husband declared he wanted a “Real Deal” banana split. I know he was thinking Baskin Robbins but I told him I could make a “Real” banana split…..As in made with bananas lol.
I followed my Healthy Sundae Recipe taking 1 frozen sliced banana with a little vanilla extract and a splash of water (only because we did not have milk).
I split it between 2 bowls that had another banana split with some strawberries (1 banana in total per bowl).
Drizzled with 1 Tbsp Mrs. Richardson’s Caramel, 2 Tbsp whipped cream and sprinkles.
The verdict: He loved it and said it was exactly what he wanted <3
