Hi all! I hope you all had a great weekend. We took a mini road trip today and came home to a surprise visit by my sis/family for an early birthday surprise then BBQ’d. Fun! A little about today’s eats before I jump into my Weekly Menu.
We had a quick healthy Eggroll before grabbing Starbucks this morning. I was good about packing snacks but never ate them. I probably should’ve though because I was starving by the time we stopped for lunch a Paisano’s for lunch. I love that their salad bar has everything chopped up in small bite size pieces. I did a good job building an all veggie salad picking one “treat” to add (sunflower seeds) with a couple croutons/crunchiest and getting real deal ranch on the side for fork dipping.
I’m honestly not someone who eats one piece of pizza and thinks, wow, I’m stuffed but I try to be satisfied with that. Today I did eat only 1 piece but I ended up with 2 pieces of crazy garlic bread. I could’ve totally continued to devour more of their pizza/bready goodness but stopped. I really focused on not beating myself up in the afternoon for caving a bit at lunch. This could’ve totally got worse when The Husband broke into his candy store bag for the drive home. I picked 2 taffies and savored them.
I am proud of myself for not eating all his candy and balancing things out with a low 4 point dinner that was delicious. I traded these amazing smashed potatoes for green beans packed with earthy mushrooms. I didn’t miss them and saved 3 points in my day.

Oh my gosh….I need the recipe for Cheese Pierogis in a mushroom wine sauce!! I’m just planning for the week and I’m starting with a chicken thigh in the crock pot dish, and pretzel crusted chicken tenders for tomorrow…that’s as far as I got 🙂
Great you were able to stop at one peice of pizza , that’s my weekends . I try to stay aaay or plan like you but so easy for me to crisscross the line into pizza goodness . I’m glad I’m not the only one who struggles . If only. Pizza weee lower calories ?
