Hi everyone! How was your weekend? We spent most of the weekend out of town and in the rain, but, it was a good one filled family fun and tasty eats. I had fun celebrating my birthday all week last week and I fully warmed my 1.2 lb gain. This week I’m back on track with a menu I’m excited about and plan on losing that pound.
The Husband and my family surprised me today at lunch for a final birthday celebration at Thai Paradise – I love this place! Even though it wasn’t part of the plan, I balanced it out with a healthy, low point dinner. Dinner involved a little recipe development for a new Smoky Sausage, Kale & Bean soup that I will be sharing with you all later this week.
B: Breakfast Burrito (La Tortilla Lite Flour tortilla, 1 egg + 1 egg white, 2 oz ham, 1/4 c bell pepper, onion, tomato & cilantro+ Sriracha) – 5 SP
S: Tall Nonfat Cappuccino with caramel on the foam (2 SP), 1/8 c Trader Joe’s Raw Almonds
L: @ Thai Paradise – Small side salad w a peanut dressing drizzle with Thai Basil Prawns (4 SP) with 1/2 c jasmine rice (3 SP), 1 c drunken noodles (6 sp)
D: 1 heaping cup Sausage, Kale & Bean Soup (4 SP), 1 PC 5 cheese garlic bread (5 SP)
