Hi everyone – how was your weekend? Today we headed back home after a fantastic week in San Diego. I got my ocean fix for a bit even if I’m not ready for vacation to be over. I am looking forward to getting back in the kitchen and making some delicious meals this week so I guess there is that lol.
This first stop this morning was Starbucks for a little travel energy aka my cappuccino. At the airport, I picked an egg scramble topped with salsa fresca and 2 pieces bacon. I skipped the potatoes at they just weren’t worth it to me. I decided the nuts were worth the 2 points on the plane. If they would’ve given us pretzels I would’ve skipped it.
Once back in town, we headed to the new Walnut Creek Jack’s Urban Eats for salads. This is my number one all time favorite salad place. The rest of the day was spent getting ready for the week to begin.
On our grocery shopping trip, The Husband declared pizza sounded good for dinner since we both did not feel like cooking. I was able to convince him to have Trader Joe’s Bambino pizzas with me. I love these little pizzas – they are fast to make, not too bad on your points and actually pretty tasty. It also totally gave me a reason to use my new olive oil & apple balsamic for a big salad on the side. I love that the Temecula Olive Oil company grows and makes everything in what they sell. It truly made the best dressing.
Daily Snap:
S: Tall Nonfat Cappuccino with caramel on top (2 SP), 1/2 banana
B: 2 scrambled eggs with 1/4 c salsa fresca (4 SP), 2 PC’s bacon (3 SP)
L: Big Salad! Mixed greens with 2 Tbsp each: olives, grilled mushrooms, pepperoncinis, apple, beets, sweet potato topped w 3 oz chicken & 2 Tbsp balsamic on the side. I also has a butternut squash, Kale onion veggies side and stole a few of The Husband’s urban fries (11 SP)
D: 1 Trader Joe’s Pepperoni Bambino Pizza (9 SP), 1 1/2 cups salad (2 SP), 1/2 apple
