Hi all! How was your weekend? My weekend was awesome on so many levels. I lost 1.6 lbs at weigh in, planted our garden, went to a farmers market after the Alameda Antique Fair and whipped up a few eats & treats for this week.
To get a headstart on this week, I made a batch of these Southwest Egg Muffins for breakfast.
I put together a Lazy Chicken Enchiladas that just has to go in the oven tomorrow.
And, I made these delicious Weight Watchers Lemon Bars with the Meyer Lemons I’ve been wanting to use up. They are so good!
I’m super excited by everything we got at the farmers market and cannot wait to dive into this week. I also cannot wait for our cute garden to start growing.

Hi Danica: I hope you’ll share how you fix your slow cooker corn beef. I fixed corned beef and cabbage in my slow cooker this weekend (I know, I got a jump on St. Patrick’s Day) but it turned out horrible. I couldn’t find my recipe that I have used for years, so I went to Pinterest to find something similar. Well, the meat was so dry it was almost tasteless, and I throw it down the disposal. Very discouraged with this flop since both my husband and I enjoy corn beef and cabbage.

Hi Peggy,
I buy the premarinated Corned Beef (at Trader Joe’s – although I have also bought it at my local grocery store). Then, I add it to the crock pot with 32 oz of beef broth and let it cook all day on low. I remove the corned beef and add the cabbage turning it up to high to cook for 30 minutes. That’s it. I know some who have used beer as well.
It comes out moist and delicious every time.
