Happy Monday all! I have to start off today with a confession. I have an unnatural love of watermelon. It might just be my favorite fruit and I’m pretty sure I could eat it at every meal. But, not all watermelons are created equal and I’m actually kinda picky. One of my favorite vendors at our local farmers market is this little old guy who drives his Ford pickup full of watermelon to sell each week.
He has the best watermelon I’ve ever had in my life and I honestly wait for him every year. I’ll even buy like 2 or 3 the last week he is there…..or get up at 6am just to cut one up so I can have it for breakfast. It only takes about 10 minutes to cut these little cubes.
The best part…snacking as I go. I mean, who doesn’t eat watermelon as they cut it, especially when it’s zero points?
It’s efficient, delicious, multi tasking lol.
The rest of my day was spot on healthy and delicious choices. I’m proud of my salad choice for our working lunch when I was eyeing the Chile Verde. My day got even better when The Husband cooked us dinner just so we could watch Shark Week tonight! <3

Hi Danica. I made the most delicious salad this weekend. The centerpiece is watermelon, so I wanted to share!
3 cups arugula
1 cup watermelon chunks
1/4 sliced almonds
1/8 cup reduced fat feta cheese
2 T. light balsamic vinaigrette
sprinkle with fresh basil
7sp and so so so so yummy.
